Why different texture - bread machine vs hand made?

Last week I made some basic French bread in the machine but baked it in the oven (and it got stuck - remember). This week I decided to do the no-knead overnight bread. And no greasing of the pan but it pops right out - amazing, but I digress. I like the texture, and so does DH and DS, of the overnight bread so much more. And the flavor is better too. It is basically the same ingredients, flour, water, yeast. Why is that? Anyone know why the texture and flavor is so different?
