soft or regular tacos????

Went to pick up the police report for the fender bender, and stopped across the street for tacos.

Ordered two soft beef tacos and they were delicious! The tortilla was so very fresh. Came wrapped in foil, individually.

First soft ones I think I've ever had and I really like them.

Soft or regular for you?

Crunchy made with flour tortillas are my first choice but will eat soft if made with flour tortillas.

I grew up eating tacos and tortillas, but not from fast food restaurants. Here in L.A., I like El Abajeno in Mar Vista (typical family style Mexican), and there are plenty of regional Mexican restaurants here (especially Oaxacan) that I like, and even a couple of Yucatecan restaurants. Yucatecan food is my favorite in Mexico, and Oaxacan (especially in Oaxaca) is low on the list, but I'm able to find some exceptions. MacArthur Park is a good place to find tamales, and there are several local companies that make gourmet tamales that I like, but they can get expensive. I don't know that much about Taco Bell, except that it began in California and I think has food that is similar to Tex-Mex. Growing up in Texas I went to locally owned Mexican restaurants - I don't remember chain Mexican restaurants from when I was a child, but that was forever ago. I separate homemade tortillas (and other things I make and freeze - pancakes, French toast, waffles, sliced quick breads...) with rounds, squares, or rectangles of plastic. Works much better than waxed paper or parchment, and BTW, freezer paper worked better than those two when I used it to separate things, and the plastic sheets are reusable. I cut rounds out of the plastic tops from containers (lg. container of yogurt, oatmeal, lids on #10 cans of freeze-dried foods, etc.). And I've purchased thin plastic kitchen cutting sheets/boards (comes several sheets to a package at Wal-Mart in the kitchen-wares department, in a number of fun colors) and cut those into sizes I need using my guillotine paper cutter. Some I round the corners so they don't poke through the foil or plastic wrap used as wrapping material, or cut to fit plastic storage containers with rounded corners. Anyway, I have a 2-" flat container I have all different sizes and shapes in to meet my needs for separating things in the freezer. You can also separate the small corn tortillas into fold-top sandwich bags - 2 tortillas per bag - then pack them back into the original bag and toss them in the freezer. If you only need one tortilla, they snap apart easily when there are only two frozen together. If you want to separate large flour tortillas, there are still 1-gallon storage bags available that use a twist-tie, you can use for separating them. You can wash and reuse these bags a number of times. -Grainlady

LOL! Sushipup, that's the thing. There are some northern places in Mexico where there just aren't corn tortillas. I wouldn't put al pastor in wheat. Fish tacos, which really are a Baja thing, as well as San Diego, are another story. And fry bread tacos are amazing! Writersblock, from what I can ascertain, the al pastor story about the shwarma is as real as any origin story from the first half of the 20th C. can be. For instance, it's well known that the French Dip and Chili Size started in Los Angeles, but there are conflicting stories about who was the first, and how it happened. Nachos, however, only have the one story about the shopping ladies coming into the restaurant between service times, when the kitchen was mostly shut down, and Ignacio (i.e., Nacho) who was serving them throwing together some bits and pieces to make them something to eat. The actual name of the maitre d' in Tijuana, Cesar something, for whom the Caesar salad is named, is known. I don't remember his full name, nor if he invented it or if it was just named for him within the restaurant, but that's a known fact that can be looked up easily. The story behind al pastor, from many unrelated sources, with sufficient drift to be pretty sure that they aren't recently from the same origin, is that there was an influx of Middle Eastern immigrants to Mexico City in the 1920's or '30's. They made schwarma. The vertical spit was embraced and adapted by their native Mexican neighbors. I suspect that it was originally lamb on the spit. That would be more consistent with what people from the Middle East would have eaten and would have spit roasted, and would make the name "by the shepherd" make sense. Easy for the Mexicans to substitute pork for lamb and add their own kinds of marinades. Note: I think everyone agrees, now, that "chili size" came from Ptomaine Tommy's and that it referred to the size of the ladle, but a number of years ago there were a bunch of other stories floating around. At that time, there was an article published, which seems to have been seminal in settling the dispute, but at the time it was printed, I thought they'd gotten the meaning wrong, saying it had come from the smaller scoop. A chili size, as I knew it from childhood in SoCal, was not a chili burger. It was a burger, with or without a bun on the bottom, smothered in a dish of chili. Thus, the original call would have been "chili size" for the bowl of chili sized ladle of chili on what, in the beginning, might have been a proper burger that the patron wanted overflowing with lots of chili, and "hamburger size" for the amount normally put on a chili burger. That's a much simpler derivation that fits the evidence better, but I couldn't tell you for sure. Ptomaine Tommy's closed well before I was born!

Beesneeds, that's hysterical! That, that there's a taco bar calculator out there. Cool! Rule of thumb is usually a quater pound of roast beef per person for any kind of banquet. The calculator says a tad more than 2/5 lb. per for taco bar, which sounds right to me for ground beef. Since you're counting on generous portions and leftovers, even though there will be alternatives, I'd go with that, or even a half pound—if you think they'll load up the tacos with trimmings. In California, half the taco would be vegetables, but perhaps that's not so with your crowd. Lonejack’s experience may be more relevant. From my own experience (not the calculator): How big is the lettuce? If you've talking a tight, heavy, bowling ball sized iceburg, and people who like it, three is probably more than enough. If you mean loose little heads with no more heft than a softball, you might need ten. Sour cream, they'll eat it all up unless you have so much they don't eat any, no matter the amount. I'd go with two of the big food service tubs (5 lbs.?), hide one, but reassure people who hesitate that there's more. If they're more modest, you can probably do with one... Figure three tortillas/shells (5”) per person, plus some extra for spills and such, kids usually eat one and some adults might edge toward five, but a standard plate is three. Unless you have a bunch of brawy men who eat ten? Two food service sized (#10?) cans of beans should be enough. Sounds like fun! We have a community dinner coming up, but I'm not sure most of the older folks will attend...

These that I had today, had to be homemade at the restaurant. They definitely were flour tortillas. And small. Just right.

And the meat, lettuce, tomatoes were fresh and the cheese had partially melted when I opened the foil.

So good. I'll go back to that restaurant again!

For regular ground beef tacos I like crunchy corn.

But for more exotic meats, I'm partial to lengua (tongue) an tripas or fish or shrimp tacos I like street style soft tacos.

I like big, greasy tacos from Taco Bell. No kiddin'. When we lived in the country, a Mexican restaurant opened and their tacos were so good. The owners were Mexican and not only were the tacos good, they made an avocado salad to die for. They had other options on the menu, but I could never get past those two things. Boy, I miss that place.

When I make tacos, I eat the crunchy ones for dinner and eat them with soft tortillas for lunch the next day.

Hey Glenda-my SIL spreads PB & J on tortillas, rolls them up and fries them!

I love crisp corn tortillas for my tacos. For enchiladas, I use corn tortillas; for fajitas, I use flour tortillas.

I prefer corn tortillas, either crunchy or not. I like tacos either way, as long as they are made with corn tortillas.

Haven't done this in ages, but really good.

cinnamon tortilla chips
spray one side with Pam OR you can use melted butter
sprinkle with cinnamon sugar
cut into strips or wedges

bake in oven until brownish and crisp

oh so good

Hard tacos are American--mexican (in Mexico) are the soft ones. I like either.

I've made those chips Glenda - and a fresh fruit salsa to go with them...it isn't spicy - just fresh fruit with some jam melted in it. Yummy! It was a Pampered Chef recipe.

Your taco's sounds SO good - I love homemade tortilla's - hard to come by in this part of the world.

Either, like hard shell beef tacos but did eat real tacos from a little stand about a month ago and they were really good. I also like my chicken soft tacos made with flour tortillas.

I eat the hard crunchy tacos at Taco Bell. But I've eaten "real" Mexican food (at a Mexican restaurant in Corpus Christi Texas) and real Mexicasn food uses soft flour tortillas, wrapped in foil as Glenda describes, or wrapped in wet corn husks. It's completely different, and very good!

I put refried beans (warmed) on a soft shell then make my hard shell filled taco and fold the soft shell over the hard! Ya get both kinds in one taco.

Fried corn tortillas for tacos. To me, taco fillings in a flour tortilla is a burrito.

I like both-just depends on the mood and fillings. Soft is better if there are lots of toppings that you can hide inside. I once had crunchy blue corn shells in Colorado-they were so yummy!! Only place I've seen them on the menu. We sometimes buy the blue corn chips here for dips or nachos.

I like them all. Especially if the tortillas are fresh and good quality.

Dh and DD will only eat corn tortillas if they are the hard kind (stand and stuff flat bottom ones).

In our area a "soft" shell taco is a corn tortilla that is fried just shy of crisp. You put them in the oil and a few seconds later they puff and you take them out and add your meat........Yum so good.
