DH and I go out a lot and last night chose a local French Provencal restaurant. He's not an eggplant fan (although he'll eat it on occasion), so this being the season I was seduced by a ratatouille entree.
The ratatouille itself was excellent, as good as the one I make myself - nice chunks of eggplant and squash with really ripe tomatoes, fragrant with fresh basil. They served it over cous-cous with a light sprinkling of good Parmesan and two poached eggs. I also added the option of sliced merguez sausage, one of our favs, but it would have been fine without it as a vegetarian entree.
It was a fabulous combination and something that would be easy to do at home if you wanted to recreate it!
