Zoe's: spinach rollups and white braised beans

Back on my nightly oatmeal schedule! And been adding sunflowers seeds for crunch. Good! Try it.

I don't know yet. We're going to the club for dinner. It's French night. A big buffet. Generally they do a good job but I have no idea what's on the menu.

Grilled small tenderloin steaks - w/steamed new potatoes/butter and fresh parsley and grilled asparagus.

Amber, Alyssa and I had a late lunch at Sirloin Stockade today so I didn't want much. Just had a Greek yogurt. Lunch was very good. Pickled beets, kidney bean salad, cottage cheese, fried chicken, mashed potatoes, white gravy, and a roll. Dessert was a piece of coconut cream pie, fried apple pie with vanilla ice cream. Iced tea to drink. We shopped for groceries again today and also went into Goodwill. I found a nice plastic case for sewing patterns and Amber got a lot of nice new little picture frames to decorate the party tables. There were 21 frames. My total only came to $2.26 for everything. Today was 30% senior citizen's day. It was another fun filled day.

I made Harry oatmeal this morning. He ususally has cold cereal with strawberries and banana,which he fixes himself, but he was out of milk. Never thought about sunflower seeds.

Monica, I just love parsley potatoes. I've been using a lot of fresh parsley lately. Don't know what took me so long to figure out how good it is. I was salivating just reading your dinner. Enjoy!

I cooked a turkey leg and wing to make broth today. Used part of it to cook noodles, and put the meat in them. So supper was noodles/turkey and leftover green beans from last night.

I've never made mashed sweet potatoes. Do you make them the same as regular?

Shirley, it's a recipe Luckygardnr posted a while ago. We both just love them and it bears repeating. Delicious and easy--my kind of recipe!

Mashed Sweet Potatoes with Coconut Milk

1-1/2 pounds sweet potatoes, (about 3 medium)
3/4 cup "lite" coconut milk
1 tablespoon minced fresh ginger
1/2 teaspoon salt

1. Prick sweet potatoes with a fork in several places. Microwave on High until tender all the way to the center, 10 to 15 minutes. (Alternatively, place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.)

2. When cool enough to handle, peel off and discard skin. Transfer the sweet potatoes to a medium microwaveable bowl and mash thoroughly with a potato masher. Add coconut milk, ginger and salt; stir well. Reheat in the microwave for 1 to 2 minutes, or in the oven for 8 to 10 minutes. Serve warm.

Tips & Notes

Make Ahead Tip: Cover and refrigerate for up to 3 days. Reheat in the microwave or oven just before serving.
Patti's note: I didn't add the salt, but I did add a little cinnamon and a dash of nutmeg.

Thanks for re-posting the recipe. It may take me a while to find the coconut milk, but I do want to try it. I've copied/pasted it to my recipe files.

I am making a new one this is the link to the recipe. Beef nacho casserole.
I changed it up a bit, used sour cream instead of mayo, used taco seasoning instead of chili powder and added some refried black beans. I also added some crushed chili cheese fritoes to the chips.

Since it is Ash Wednesday we fast, it's a meatless day. So I made my 'enhanced' Tuna Noodle Casserole and a huge salad. Two days in a row we had noodles/pasta!! It's a record!

I am not a sweet potato fan but that sounds pretty good.

Patti, coconut milk is suppose to be good for the brain. Wards off Alzheimer's. Keep eating that casserole!

We had Japanese fried chicken tenders, roasted asparagus and rice......with homemade fudge for dessert.
