Help me quick! Can I make cake batter ahead?

I am getting a little overwhelmed looking at my cooking plan for the week -- besides Rosh HaShana and all the meals through Saturday, I am making a birthday luncheon for my daughter on Sunday (what was I thinking?!).

I am not having that many for RH, so that helps, but it would help to make my cakes ahead. Like, today, for Wednesday night. Now, I'm not talking about a fluffy birthday-cake type cake; I mean the dense, heavy, moist kind, specifically a honey cake and an apple cake baked in 8 1/2 x 11 pans; you know what I mean.

So what is the way to do this? Can I make the batters ahead, keep them covered in the refrigerator, and then bake Wednesday? Just make them today or tomorrow and, like, so what if they are a day or two old?
