Side dish recipe we are having tonight...if.....

I don't finish it off today...lol

I made this for me for lunch, but I made more than I need.

It was so good (at least I think so) that I decided to save it for a side dish for supper.

It kind of like Spanish Rice.

and I got the idea from cooking that chicken recipe I posted last week.

I took two cups of instant rice.

And two and a fourth cup of water

I chopped up green and red pepper maybe 3/4 cup (to your liking)

I put the peppers into the water while bringing it to a boil.Plus about two tablespoons dried chopped onions.

When it was boiling I put in the rice and let it set until the water was soaked up and the rice was tender.

Then poured in 1 cup med. Pace salsa and about a half cup of mex. shredded cheese (because that's all I had left. I probably would have used more)

Stired it all together and let the cheese melt.

I liked it.

We're having petite sirloin cooked on a cast iron grill that fits on the stove. Denny says he's not going out and standing in knee high snow to grill it....party pooper
