Well, another great Thanksgiving recipe is from the Better Homes & Garden, 1976 (I threw away a 1972 version and regretted it. My husband replaced it with a 1976 version from ebay, and I inserted my older pages in it) So I don't know how old this recipe is ..... but it is great! CORNBREAD STUFFING (oven 350°) In a skillet, cook 1/2 lb. bacon (8 to 10 slices) till crisp; drain, reserving 1/4 cup drippings. Crumble bacon; set aside. To skillet, add 1 cup chopped celery, 1/4 cup chopped onion, and 1/2 cup water. Cover; cook till barely tender, about 7 minutes. Combine bacon, reserved drippings, vegetable mixture, 3 cups coarse corn bread crumbs; 6 slices toasted bread, cubed, 1/2 teaspoon rubbed sage, and 1 cup chicken or turkey broth; toss well. Bake, covered, in a 1 1/2 qt. casserole at 350° for 30 minutes. Makes 6 servings, or enough stuffing for an 8 lb. turkey. I made this for wonderful Canadian friends. Had to print out the recipe and send it home with them (along with a recipe for cornbread). They will be back here at my home for their second Thanksgiving this year. Cheaters! I'm thinking they have been here for a total of 4 years...out of 6. must like American cooking!

So simple, yet so good. Lemon Salt Marinated Pork Tenderloin Recipe courtesy Michael Chiarello 6 lemons 1 1/2 tablespoons salt 2 tablespoons extra-virgin olive oil Freshly ground black pepper 2 pork tenderloins (about 1 1/2 pounds total) Honey Roasted Applesauce, recipe follows Preheat oven to 425 degrees F. Finely zest the lemons. Using a mortar and pestle, work the salt and lemon zest together. Add a few turns of black pepper and 1 tablespoon of olive oil. Stir to blend. Rub the lemon salt mixture all over the pork. In a large saute pan heat the remaining 1 tablespoon of olive oil until hot but not smoking, add tenderloins to pan and sear on all sides, about 5 minutes total. (If you have a small pan, sear 1 tenderloin at a time.) Move pan with pork to the oven and cook until a meat thermometer reads 155 degrees F, about 6 to 8 minutes. Remove pork from the pan and let rest on a cutting board for about 5 minutes. Slice the tenderloins against the grain on a diagonal bias, fan out on a plate, and serve with Honey Roasted Applesauce. Honey Roasted Applesauce: 6 apples, Gravenstein or McIntosh 2 tablespoons sweet butter 2 tablespoons fresh lemon juice 1/2 teaspoon finely ground sea salt, preferably gray salt 1/3 cup honey Preheat oven to 425 degrees F. Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks. Heat a medium saute pan on medium-high heat with the butter in it. When the butter begins to brown add the lemon juice and cook for 30 seconds. Stir in the apples and salt. Saute for 3 to 4 minutes until the edges just begin to color. Add the honey and put in oven for about 15 to 20 minutes until the apples are soft and lightly caramelized. Mash with a fork for a chunky version, or put in food processor for a smoother sauce. Serve warm, room temperature or cold. Yield: 4 to 6 servings Cook's Notes: Most applesauce recipes call for cooking the apples on the stovetop from start to finish. I prefer to start them on the stovetop and then finish them in a hot oven. The oven heat concentrates their flavors by drying and caramelizing them slightly. Although I have suggested a couple of apple varieties, you can use what good cooking apples are available in your area.

This one is always a huge hit when we go boating. Travels well, very tasty , substantial and a bit different. Don't let the ingredients list put you off it really is very easy to make. Real N'awlins Muffuletta (Weed) 1 cup pimento-stuffed green olives crushed 1/2 Cup drained kalamata olives crushed 2 Clove garlic minced 1/4 Cup roughly chopped pickled cauliflower florets 2 Tbl drained capers 1 Tbl chopped celery 1 Tbl chopped carrot 1/2 Cup pepperoncini drained 1/4 Cup marinated cocktail onions 1/2 Tsp celery seed 1 Tsp dried oregano 1 Tsp dried basil 3/4 Tsp ground black pepper 1/4 Cup red wine vinegar 1/2 Cup olive oil 1/4 Cup canola oil 2 (1 pound) loaves Italian bread 8 ounces thinly sliced Genoa salami 8 ounces thinly sliced cooked ham 8 ounces sliced mortadella orcappicola 8 ounces sliced mozzarella cheese 8 ounces sliced provolone cheese Directions 1. To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight. 2. To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella ,mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters. 3 Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

Our cooking club meets tonight, and every November our theme is "Thanksgiving sides". The host makes turkey, and guests bring everything else. As mentioned, I am making the salad i linked above with baby arugula, fennel, goat cheese, pine nuts and prunes, which I will assemble on site. I just finished the recipe for Carrots and Parsnips Roasted with Maple Syrup, Bacon and Thyme. I had some for lunch. Yum! The recipe is here: Glazed Carrots and Parsnips A few comments. Make sure not to buy carrots in a bags; you want thin ones and a little bit of the tops. Some of the parsnips made need to be quartered to be comparable size to the carrots. You will leave a bit of the carrot greens on; wash the area where the carrot meets the top very thoroughly or even scrape with a knife to remove dirt. Use a LOT of salt and pepper. Watch them closely; 450 degrees in the bottom third is a very very hot oven. They say to discard the bacon (and it may be quite burnt). But I think the dish is a bit blah that way. I actually fried up 4 more slices again, in a pan with a bit of maple syrup, and garnished the dish with it. Going into the oven: First pass: More bacon, please! With that enhancement, I give it a big thumbs up.
