Comments (37)All the talk about Scalloped Oysters - I am adding them to my menu for this year. I found the following Martha Stewart recipe, it sounds pretty good to me, but since I have never had a scalloped oyster, I'm not sure if it has too much "stuff" and should I stick to the recommendations above? Scalloped Oysters Choose fresh, briny oysters that are small or medium in size. Martha Stewart Living, November 2012 http://www.marthastewart.com/939250/scalloped-oysters Prep Time25 minutes Total Time35 minutes Serves8 Ingredients 6 tablespoons unsalted butter, divided, plus more for baking dish 3 cups coarse fresh breadcrumbs Coarse salt and freshly ground pepper 1/4 cup coarsely chopped fresh flat-leaf parsley 1 celery stalk, very thinly sliced on the diagonal (1/2 cup) 3 scallions, trimmed and chopped (1/3 cup) 2 teaspoons fresh thyme leaves 2 tablespoons dry sherry 3/4 cup heavy cream 2 pints (32 ounces) shucked fresh oysters in their liquor, drained, with 2 tablespoons liquor reserved 1/8 teaspoon freshly grated nutmeg Directions 1.Preheat oven to 450 degrees with rack in top position. Brush a 9-by-13-inch baking dish with butter. Melt 2 tablespoons butter in a large saute pan over medium heat. Add breadcrumbs and 1/4 teaspoon salt, and cook, stirring frequently, until breadcrumbs are golden brown and crisp, about 10 minutes. Stir in parsley, and remove from heat. Sprinkle half the breadcrumbs evenly in baking dish, and transfer remaining breadcrumbs to a plate. 2.Wipe pan clean, and return to stove. Melt remaining 4 tablespoons butter over medium-high heat. Saute celery and scallions, stirring occasionally, until scallions just begin to soften but celery is still bright green, about 2 minutes. Stir in thyme. Add sherry, and simmer 30 seconds. Add cream, and bring to a boil. Stir in reserved oyster liquor, the nutmeg, and 1/4 teaspoon pepper. Remove from heat, and stir in oysters. 3.Spread oyster mixture evenly over breadcrumbs in baking dish. Just add the drippings from your T-day bird at the last minute and you're good to go with gravy. Make-Ahead Turkey Gravy Makes about 2 quarts For more flavor, after roasting the turkey you can skim the drippings from the pan and add them to the gravy just before serving. It's best to discard the strong-tasting liver before using the giblets. This recipe makes enough to accompany a large turkey and still have plenty for leftovers. 6 turkey drumsticks, thighs, or wings reserved turkey giblets reserved turkey neck 2 carrots , chopped coarse 1 head garlic , halved 2 ribs celery , chopped coarse 2 onions , chopped coarse Vegetable oil spray 10cups low-sodium chicken broth 2 cups dry white wine 12 sprigs fresh thyme 1/2 cup all-purpose flour Table salt and ground black pepper 1. Adjust oven rack to middle position and heat oven to 450 degrees. Place giblets, neck, drumsticks, carrots, celery, onions, and garlic in roasting pan, spray with vegetable oil, and toss well. Roast, stirring occasionally, until well browned, 1 to 1 1/2 hours. 2. Transfer contents of roasting pan to Dutch oven. Add broth, wine, and thyme and bring to boil over high heat. Reduce heat to low and simmer until reduced by half, about 1 1/2 hours. Pour through fine-mesh strainer into large container (discard solids), cover stock with plastic wrap, and refrigerate until fat congeals, at least 2 hours. 3. Using soup spoon, skim fat and reserve. Heat 1/2 cup fat in Dutch oven over medium-high heat until bubbling. Whisk in flour and cook, whisking constantly, until honey colored, about 2 minutes. Gradually whisk in stock, bring to boil, reduce heat to medium-low, and simmer until slightly thickened, about 10 minutes. Season with salt and pepper. Comments (18)I have become addicted to Mock Mashed Potatoes made with cauliflower! I had seen the recipes from time to time, but never thought they would really taste like real mashed potatoes -- but they do. My preparation is very simple. I've seen it with Ranch Dressing or non-fat Ranch Dressing added to it also. Steam a head of cauliflower until very soft. Mash. Add I Can't Believe It's Not Butter & salt to taste. ---------------------------------------------------------- Here's another one, a bit more complicated but still easy: Mock Mashed Potatoes Your guests will probably never know that these rich mashed potatoes contain no potatoes at all. They are made from cauliflower. Great for low-carb diets. These are doubly good with bacon bits added. INGREDIENTS: 1 head cauliflower, cut into florets (discard core and large stems) 1 (14 ounces) can chicken or vegetable broth (or homemade - about 1-3/4 cups) 2 Tbsp butter 2 ounces cream cheese 2 Tbsp sour cream 1/2 cup shredded cheddar cheese 1/4 cup sliced green onions, white and green parts Salt and freshly ground black pepper to taste PREPARATION: 1. Place cauliflower florets in a large saucepan. Add chicken broth and bring to a boil. 2. Cover and simmer until very tender, about 12 minutes. 3. Drain thoroughly through a fine sieve and return to the pot over low heat. 4. Cook about 2 more minutes to dry out excess moisture, stirring constantly. (It's okay that they break apart.) Pour cauliflower into food processor fitted with the metal blade. 5. Add butter, cream cheese, sour cream, cheddar cheese, green onion, salt, and pepper. Pulse to combine. Comments (57)I've done my potatoes-8 pounds' worth of the pioneer woman recipe and stashed them in my slow cooker for easy warm up and transportation, made brownies, have a turkey breast thawing and eggs slow simmering for the deviled eggs. That's my only oops; I already slow simmered 18 eggs last night-and left them at our house when we came down to the weekend place. Oh well, no biggie. I'll make a batch of stuffing tomorrow, roast the turkey breast and make gravy. Then take it all to my dad's house! It's still worlds easier than hosting everyone at our house, plus I can take a nice plate over to our elderly neighbor who just had his cataract surgery today....See MoreUser
