questions about convetion....

Hello! My old microwave bit the dust yesterday. I was heating up a frozen country fried steak for BF and by the time I got back to the microwave, the steak was burned to a crisp. The magnetron tube stayed on after the timer had finished and wouldn't turn off even upon opening the door. The sad thing that it was also a bread maker, rotisserie, and oven so I lost 4 appliances in one!

I spent the entire day shopping for a new microwave and finally settled on a stainless steel GE microwave/convection oven combo. Of course I would have to fall in love with the most expensive one I found, sheesh! It was this one or a Panasonic with Inverter technology (reduces actual power level instead of cycling magnetron tube on and off when power level is changed), but thought I'd get more use out of a convection feature. Anyway, I've never used a convection oven before so I just wanted a few tips on how to get the most out of it.

How do I need to adjust time/temp as not to burn things? Also, what's a good size for dishes to get to use in it? Does glass do well, or should I stick with metal? I know my 9 by 13 cake pan will not fit in it. May even have to buy round cookie sheet!

I guess I'll have to re-learn to bread in the stand mixer (or buy a breadmaker to supplement it). Do convection ovens do well with bread? What are some good things to use it for? The book didn't come with any recipes at all!

This one doesn't talk like the old one did, but at least I have a timer now... I've already tried to pull the door handle open, even though this one has a push button, guess there's a learning curve!

Thanks for any tips you have... only people on this forum can understand how exciting it is to get a new kitchen toy!
