I picked up an artichoke the other day. Delighted at my find. You just don't see fresh artichokes in North Idaho in February.

Blech, blech, blech

Tough and no flavor.

I did pick up a fresh pineapple for 1.99 though that was just wonderful!

I love artichoke, but don't know how to tell if they are going to be good, or how to cook them.
Can anyone give me some tips?

Make sure the artichoke squeaks when you squeeze it. If there is no noise its probably old.
I cook my artichokes in my pressure cooker since its quicker. Cut off the very top so the leaves are flat on top, cut each leaf top off flat, just a little,(there is a thorn at each end) Then I smash the top on a cabinet corner to open it up, Shake on salt & garlic powder. Place in a steamer or pressure cooker. it takes about 15-20 in the PC, an maybe 30+ in a steamer. When the leaves pluck off real easy they are done. Good luck, I just love them.

Help! Did we screw up? Vent-A-Hood only 21" deep

Are you sure the hood isn't over the burners? Is the edge of the burner much more than 21" from the wall? My hood is 21", too, and only 19" if you subtract the part with the light in it. But the hobs in my induction cooktop only come out 19". When it's on, I can see the steam heading up and back into the baffles. 24" is better capture area, no doubt, but this may be just fine for you. If not, rentaltux's suggestion is good.

I'm happy to report that I survived! :) And, no, Jessy, there were no, um, "dire" consequences. DH liked it, too, and, with his current dental problems, I think he appreciated the soft, moist texture. Lou, you have the right idea, and I'd love to take you along with me when I go to the Customer Service desk--anywhere! Come to think of it, I very rarely bother with returning foods to the store; it's not worth standing in line with all the lottery ticket customers to get a few cents back on something I tried but didn't like. But once, many years ago, I bought a turkey that was definitely spoiled; I could tell by the smell as soon as I removed the wrapper. And it was well within the expiration date. So I did return it and got a refund. Jessy, a lot depends on the packaging (as well as the processing/handling, of course). I can now get vacuum-packed ground beef that is good for more than a week, whereas the same kind of meat, in the usual cellophane wrapper, has to be used by the next day. And you can buy crabmeat that can be kept in the fridge for a year! Sue

We actually do have insurance for the phone (got smart this time)and it will likely replace this. The previous two lost there we did not, and we paid to replace each. The payment for replacement by SD or mom would be more to make a point that we are tired of paying for mistakes we didn't make. I think the laundry was done after SD went to bed because SD hadn't Put the jeans in the laundry - they were picked up from her room (same as last time.) There are thoughts in the back of my mind that the phone may not have even been in the pocket but was instead placed there. SD doesn't remember where she last had it as it had been taken away. Unfortunately because SD walks back and forth to school we don't feel safe with her not having a phone so we will have to quickly replace it, especially since it's dark now when they walk home. I am of the school that SD should pay at least a portion of the would be replacement cost. But do we even try to talk to mom about her place in this debacle? She is squarely in the camp that it is all SD's fault. Truly, had she just said she was sorry that this happened - AGAIN - I would probably feel like letting it go in the interest of fostering this new found co-parenting. I still don't believe in coincidences though.

Hi Trin!-- artichokes leaves should be tight; sometimes they are discolored in spots which indicates frost damage, but that's ok because it does not affect the fleshy part we eat. They should feel heavy for their size and apparently the smaller ones are a bit better.

I cook them plain, boiled in a couple of inches of water with lemon juice squirted over them; they take quite awhile to cook--I'm guessing @45 minutes or so. To check whether they are done or not, you should be able to pull out a leaf easily. Before cooking, trim the bottom stem end and trim each leaf (1/4-1/2 inch) to remove the thorn. At the top, I just slice off the pointed part. It's what you dip them in that makes them so yummy, imo! We use sour cream and curry powder, but most people use a mayonaise-based sauce.

I love them too...sooo good. I make a dip using olive oil, parmesan cheese salt and pepper. especially delicious. My father was from Italy and that is how we always ate them.

When I was a kid growing up in Oregon, mom had an ENORMOUS artichoke plant on the south side of the house. We ate them regularly in season. I can make an entire meal out of a large artichoke!

Now in WNC, artichokes are rare, ratty, and flavorless. Sigh..I love 'em!

The ones I used to eat in oregon were yummy, havne't found one yet in Texas, but with all this good advice, i am going to give it another shot!
