oh man I don't think I could live with out my Rotel! I buy it by the carton at Sams and Costco!

the number one thing I think most people make with it is velvetta and rotel dip, we add a can of chili to ours . Just put it all together into a microwave safe bowl cut the velvetta cheese into small cubes so it melts faster, and stir it from time to time till it is all melted and gooey good. Use tortilla chips or frietoes scoops

Just about any of my recipes have rotel lol.

Mexican Skillet Meal

1-1/2 lbs. ground meat
1 small onion, chopped
1 clove garlic, minced
1 c. chicken stock (or broth)
1 can Ranch Style beans
1 can Rotel tomatoes (hot or mild)
1 can corn
1 small can chopped green chilis
1 T. chili powder (or to taste)
1 tsp. paprika
1 tsp. cumin
1 c. hot water
salt/pepper to taste
8 oz. wide egg noodles, uncooked
1 c. sour cream
1/4 c. Parmesan cheese
10 oz. pkg. Mexican mix cheese
picante sauce (optional)

In a large skillet, brown ground meat with onion and garlic; drain. Stir in chicken stock, beans, tomatoes, corn, green chilis, chili powder, paprika, cumin and hot water. Bring to a boil.

Stir in noodles and lower heat to simmer. Cover and let simmer until noodles are tender. Stir in sour cream and Parmesan cheese. Top evenly with Mexican mix cheese and let simmer until melted but don't stir!

Serve with additional sour cream dollups and picante sauce drizzled over each serving, if desired.

Serves: 8

I have not made this in a while now but we always loved it. USE a BIG skillet or wok pan.

and in general when a can of rotel is called for you use the entire can, if it is to be drained it will specify that.

That surely is a great gift from Fun2BHere. How thoughtful! If you go to Rotel's website there are several recipes that sound good--especially the jambalaya! I always have them in the pantry.

They are just so handy to have on hand...I always stock up when the price is reasonable. I've noticed some store brands have "compare to Rotel" on their label, and these have not been bad, either.

Fun2BHere, it took exactly 7 days to get here, which I think is terrific! And that's considering there's no weekend delivery, and it had to cross the border. Our mail can take 5 days easy, just staying in Ontario.

I think we got lucky because the last item I bought from a Canadian eBay seller took over a month to arrive and that was only after I put a tracer on the package. In that case, I had a tracking number. Unfortunately, the item inside was broken. I'm glad that it's hard to damage canned goods. :-)
