Canning Season

Eileen shamed me into it, with her pictures of salsa. I've been canning too, really I have, and not just stuff for the fair.

I've been canning beans, both Royal Burgundy and Elery's Pink Half Runners. The Royal Burgundy start purple and turn green when cooked, the kids used to call them "Magic Beans".

I canned corn and sweet pickles and bread and butter pickles, but I forgot to take pictures. Really, I did, I promise. (grin)

I've been working on the tomato harvest, they were late here, strangest darned weather. Anyway, I canned KatieC's Smoky Chipotle catsup in half pints, I canned 8 pints and 2 quarts of Readinglady's Chunky Tomato Basil sauce and I canned a dozen quarts of stewed tomatoes. I'd already done salsa, although I might make one more batch.

Oh, and I canned blueberry jam and three bean salad and some bread and butter type pickled onions for my mother, she likes only the onions out the bread and butter pickles:

No apples, so that's out, but I'm thinking about what I might can next. I have beets in the garden, maybe pickled beets. Or some of that kale, the stuff is going crazy this year.

I didn't get enough to can, but I did get artichokes, I was excited. This one went to Elery's along with two of those white tomatoes, one Golden Jubilee and one Mortgage Lifter:

I love canning, I just wish the produce would hold off until it gets cooler!
