I guess I'm in the minority but I thought this was a lot of work for ok but not great chicken. I thought it had a very chickeny taste. However I used fresh garlic--I hate the aftertaste that garlic powder leaves. The skin did split on mine but I looseded the skin in order to put the seasonings and garlic underneath. I was amazed at the amount of fat and liquid in the pan by the end, and it certainly was pretty, but in future I think just a chicken breast with bone in baked for half an hour or so is easier and tastier.

First of all I would add the juice of a half of a lime to that recipe...I think it'll be flat without something acedic. How about a croissant and s veggie garnish on the plate...like a small amount of marinated veggies or a few broccoli florets...and serve the salad on a leaf of bib lettuce....and how about pound cake with lemon sauce for dessert? linda C

Rusty, I made your hot chicken salad and it was great! I didn't take pictures but I wanted to let everyone know that both recipes that I tried are keepers!! Now that is a challenge. If you have a covered casserole dish that can go in the oven you could do a ratatouille type of mixed medley. Maybe not the 'rainbow' arrangement, but a variety of soft veggies sliced thin and arranged around a center of peeled new potatoes. Eggplant, yellow and green zucchini, a thinly sliced sweet potato, broccoli...things that will cook/steam very soft. Drizzle with a honey/lemon vinaigrette. A bit sweeter than normal. In the oven covered and cooked a bit longer, they will get really soft. The potatoes i would par-boil.
