Recipes that don't require the oven to reheat -- for hot weather

Hello all!

I am working on building up a supply of freezer meals. However, as hot weather approaches I see one drawback in most of my menus -- all of the reheating instructions use the oven. In hot weather, I don't like to heat the house up more by using the oven.

What kind of recipes do you use in the summertime that don't require reheating in an oven?

There isnt much I can think of. You can have things to go in the microwave (if you have one) like chili or stew but it often to hot to want that kind of meal. I find burritos in the freezer are good, I make some beef, bean, chicken, and also chicken wings. Most things can be re-heated in the microwave just like using your oven they just dont usually taste as good. I make lots of stovetop dishes in the summer (pasta, skillet meals), Lots of salads of all types, Use the BBQ for meat or fry, but of coarse none of that is a freezer meal.

Does the oven heat up the house more than the stove top? I guess that's because the oven tends to be on for longer than a stove top burner. If you have a vac-sealer you can make things to boil-in-bag to reheat, but boiling that long would heat up a room too.
Can you grill outdoors? If you use foil packets or a dutch oven and indirect charcoal cooking with a lidded grill, you can really bake out in the backyard. Your typical freezer meals would work. Bake potatoes or potato wedges with or without foil on the grill.
I've seen something in the stores that is a veggie combo packaged for the grill, so surely you can duplicate things like that to keep in the freezer.

We got our Miele steam oven two months ago and we love it. It takes a few minutes to begin steaming but the result is far superior for reheating than the MW. And for veggies, it's really nice to not have pots on the stove. Go for it! And if you're looking for a great Speed Oven, the Miele is it. I was worried that it wouldn't broil, but that's all we use it for and we've only used it twice as a MW. It's the best broiler we've had. What a relief! We have both Miele's under the counter side-by-side. They look nice, but it would have been nicer if Miele had coordinated the clock panels so they matched. The steam oven has a backlight I can't get rid of but the Speed Oven doesn't. Other than that, we're thrilled with the Miele's and I did a LOT of research!

yikes! I'd be bummed if they burned while reheating! The crust ingredients are a standard pie crust plus 2 tsp sugar, but I haven't used this dough recipe before. There is a microwave so I could use the microwave to take the chill off and then move them to the toaster oven to re-crisp them. Can't use aluminum foil in the microwave though, so what's the best way to accommodate the transition? I wish they had a full-size oven!!! :) I don't know if anything larger than a salad plate will fit in the microwave. lol! I have an electric skillet -- would that work to reheat them?! I will be baking these empanadas, BTW.

So, Histokitch . . . what size fridge do you have that works for you? I could have written your post. I have the DH who commutes 1.5 hours each way, 4 kids to feed, top row all milk, tons and tons of fresh veggies and fruits that kill me on space and even meat for 3 days and I am out of room. I HATE my refridgerator. Nothing fits, I can't find anything, food rots because I can't see it pushed to the back (also hampered by the placement in the kitchen where neither door (sxs) can open fully so I can't see inside. I hate saying to DH -- this was really good when I first made it . . . of course now several hours later and microwaved it kind of s#$ks. So, I live for the day of a warmng drawer and the right size and format refrigerator . . . just need to figure out what size that might be.

Mamapinky, I think my DH’s taste buds have suffered the same issue as yours – too much fried food in his past! BTW, didn't you mention a laundry channel on youtube you'll be hosting (on another thread?) I can't find the thread, but let us know for sure - I'll sub, and my first question pre-youtube is how to get those 'screaming hot whites' - please do a vid on that! Cathy, I laughed out loud thinking of you spitting that tomato skin out and making the comment! Too funny! I have a good rapport with mine green grocer.. maybe coz I’m the only one asking for and buying some of the more unusual things here : ) Uh, chocolate chips in the yogurt bars… now you’re talkin’!!!
