Going Against The Grain

Brisket, brisket, brisket!

Didn't realize I had one buried in the freezer.

Frozen solid it went into the sous vide cooker with a few seasonings. Set the temperature to cook it medium. I like my brisket cuts cooked medium.

Forget about juicy fork tender! Give me a spoon instead please.

Notice I cut it with the grain, not across the grain. It was not necessary.
