Weekly Menus

I don't think we've done this yet. How about a week's menu involving once a week cooking? Maybe for starters, some ground beef, a roast chicken with a list of "stretcher meals" or leftover dishes? This is a real challenge for me with hot weather upon us. I'd love to hear your ideas.

Okay...I have been waiting for people to start responding to this before I jumped in but I have a busy week planned so I am going to rely on things on hand so here is what my plans are..........I am sure I will add to and substract before it is over and done with but the plans are......

Sunday..Cooked big pork butt for dinner...w/3 bags for freezer

Monday...Sticky chicken....cooking tomorrow for dinner and two for the freezer.Got it in the fridge marinating with the spices now.

Tuesday...Stuffed Peppers.....Ground Meat cooked already and waiting in freezer. Twice baked potatoes in freezer stock.

Wed.....pork from the sunday roast sauteed with peppers and onions served in a flour tortilla with mexican side dishes ...beans in freezer

Thursday..Chicken and yellow rice...Sticky chicken from Monday and I'll do the yellow rice that night.

Friday...Probably won't be home going to Cape Cod for the weekend but if so will probably have Spagetti Pie from one of last weeks cooking days ......

I "crockpot cooked" this past weekend. I'm still recuperating from this past winter's gas bills :)
Anyway, I used the cooking bags in the crockpot (I have 2) and was able to cook a few items at the same time. Heres what I did:
In one crockpot, I place a seasoned pork roast with veggies in a cooking bag. I put it on the bottom. Then I used a smaller cooking bag and put in whole green beans with sliced green, red, and yellow peppers. In a second crock pot, I cooked chorizo(sp?) sausages with peppers. Put all this stuff on and went to church. When I came home, the aroma was mouth watering! Here's what the family is eating this week (I eat what they eat, minus starches and sweets)
Sunday Dinner
Pork roast with veggies, rice, and garlic bread
Monday
Chorizo sausages (drained fat), pasta, green salad
Tuesday
BBQ pork sandwiches, coleslaw (I use preshredded coleslaw mix)
Wednesday
Upside Down Night (waffles, scrambled eggs, bacon)
Thursday
Sausage subs (last of the chorizo), oven baked french fries
Friday
Its anybody's guess.......

I have and LOVE "Out of Milk". It is a shopping list. Until very recently it was only available for android (which I have), but I got an email yesterday telling me that it is now available for iphone (which DH has). When he got the iphone, I got his android and he was pretty bummed that he couldn't have Out of Milk. He had tried some of the other shopping list apps, but really liked this one best. It is free, but you can get more options if you purchase for a minimal $1.99. He downloaded it yesterday and played with it for a bit. You can also make changes to your list online and it will sync with your iphone. Can't help with anything other than the shopping list.

I do the menu per week, also based on what is in the freezer/fridge or what's on sale at the store. I usually try to make 1 large dinner every other day to save on time and money. I made my favorite chicken dish on Sunday (Puerto Rican Chicken) and we ate that for 2 nights. Then last night I made Pork Chops in the crockpot, home fries and green beans. DH can eat the leftovers when I go to the gym tonight. Fri & Sat we play by ear, maybe go out one night, or just do soup? Lately my 5 year old has liked making English Muffin Pizzas on Friday nights-cute family activity! Today at the grocery store I got, 4 lbs of hamburger, 2 pork tenderloins (buy1 get1 free!!) and some tilapia. May make tacos this weekend (freeze the rest) and DH has been asking for fish, so that can be next week! Plus he loved the Shepard's Pie I made last week, so that is in the monthly rotation again!

menu board/ chalkboard solution?

We lost the spot for our chalkboard when we remodeled but we had one big empty wall behind our kitchen table. Our drywall has a light texture and I was afraid just painting with chalkboard paint would result in a surface too bumpy to write on successfully. So we bought a sheet of masonite (Home Depot cut it to the finished size for us) and painted it with chalkboard paint. We then mounted the masonite on the wall with sheetrock anchors. Our edges are unfinished but it would be easy to build a frame with molding around the edges.

Hi Deb! Here's what I do. I don't cook for anyone but me so I can afford to cut corners or change plans or eat late or early but this still might give you some ideas. In theory, I plan and cook ahead some for the week (I work full time). In reality, some weeks I do and some weeks I don't, and even the weeks I do, I sometimes ignore what I've prepared. But in theory and sometimes reality what helps me is to think a bit ahead and cook at least one item to use during dinners all week, with the remainder of the dinner being quick and easy to prepare. For example, I might cook enough brown rice for 3-4 meals during the week, and then use it one night with stir fry vegies, another night with sweet potato and bean stew on top (from the freezer or cooked ahead), and so on. Or I might cook beans and vary how I use them. I'll prepare enough salad for several meals (I don't care much for the bagged salads and right now I have stuff from my garden anyway). I'll prepare veggies that can hold well - cut up broccoli, carrots, etc., and store in airtight containers. Then all I have to do is stir-fry or steam or whatever. I also keep homemade soups or other items in the freezer. And I have found some good frozen veggie dinners that I like, and a few of the "burgers," and when I'm just too tired to bother, I'll have a good ol' PB&J or even a bowl of cereal! I always have tofu in my frig - it's good for a quick meal - a "fried egg" sandwich, or in stir-fry, or fake chicken or tuna salad, etc. I tend to eat by intuition, so I couldn't make a meal plan for a whole month and expect to stick to it, and as I said I'm not always good about sticking with a week's meal plan, but it's nice to have in place anyway. I'm always looking for new recipes and quick, simple foods. I stay away from processed foods for the most part (including the healthier ones, like tofu) but will use them within reason. The fresher, home-grown foods really taste better and make simple meals a delight - I love summer because I grow my own veggies and that's when things like pasta with fresh tomatoes and summer squash really shine. My pork butt and the chicken both came out really good so we had our meals and I have four extra meals cooked/frozen plus I had a pork sandwich for lunch. I am already thinking how good pork barbecue will be.
