Peanut Butter Lust Bars

OMG! Now there is ANOTHER reason to go eat a fantastic taste sensation in Maine! Besides lobster and Flo Dogs, I am adding Peanut Butter Lust Bars to the list. Unfortunately, my DH only bought ONE as we were checking out of our third trip to Kittery Trading Post, and we didn't even try it until we got home this evening. THEY ARE ABSOLUTELY TDF!

In texture, they are softer than a peanut butter Buckeye, but have a similar taste until you encounter one of the flavored bits....

I may try to make them when the weather cools a bit down here, or I may just get lazy and order a mess of them. KTP has free shipping on orders over $50!!! LOL!

Alexa, Thanks for the lead. Next month we are staying at a cabin in Maine and I've scheduled one day trip is to KTP. If I recall correctly, KTP is on the south end of the mess of outlets and on the west side of the street???

Here's my favorite oatmeal peanut butter cookie - taken years ago from an old Sisterhood Cookbook: OATMEAL PEANUT BUTTER COOKIES 1/2 Cup Trans-fat Free Shortening 1/2 cup butter, softened 1 C packed brown sugar 3/4 C white sugar 1 C peanut butter 2 eggs 1 1/2 C AP flour 2 t baking soda 1 t salt 1 C quick oats ***************************************************** Preheat oven to 350. Line cookies sheets with parchment. Cream together shortening, butter, peanut butter, and sugars until smooth. Combine flour, baking soda and salt; stir into the creamed mixture. Mix in the oats until just combined. Chill an hour or so (not sure if this step is necessary, but I always chill it at least 3-4 hours if possible). Drop by level tablespoons-ful onto parchment lined cookie sheets. Bake about 15 minutes, until just light brown. Don't over bake. Cool on wire racks. These freeze very well. With my obsession with peanut butter, they don't last long at all in this house:-) Enjoy! DONNA

Skippy Crunchy is my fave. And my job buys it (1/2 creamy too) by the case for anybody that uses it at work. The neat thing (for me) is that they only provide forks and spoons to use with it, so the guys always open a new jar with about 1/5 of the jar remaining. Sounds odd, I know, but they wouldn't keep track of a butter knife for a day in this shop. So, I get the leftovers for free! I save pine cones cover with pb, and cover with bird seed for the grandkids to make and hang from our trees. also use it to keep the dogs kong toy full. I feel better about all that then just throwing it away. Don't even get me started on the amount of bread they waste, that comes home to feed the birds too. Trin

RECIPE: Peanut Butter Pie with Chocolate Ganache

This was a huge hit on Xmas Eve (so we're making it again tonight!) Peanut Butter Pie with Chocolate Ganache: Crust (or just use a bought Oreo cookie crumb crust, like I did!): 1-1/2 cups chocolate wafer crumbs 1/3 cup butter, melted Filling: 1/2 cup whipping cream 1 8-oz package cream cheese 1 cup smooth peanut butter 2 Tbsp. soft butter 1 Tbsp vanilla extract 1 cup confectioners sugar Topping: 6 oz. bittersweet chocolate (I used 2 3-oz Scharfenberger bars) 1/2 cup whipping cream Crust: Preheat oven to 350 degrees Combine crumbs and melted butter and pat into 9" pie plate. Bake until firm and solid, about 8 minutes. Let cool. Filling: In medium-sized bowl, whip the cream and refrigerate until needed. In large bowl, beat softened cream cheese until fluffy. Beat in peanut butter, then butter, then vanilla. Beat in confectioners sugar until fluffy. Fold about 1/4 of the cream into the mixture to lighten it up, then fold in the rest. Use a light hand -- but don't leave any streaks either. Fill crust with peanut butter mixture. Cover with plastic wrap and refrigerate about 3 hours. Topping: Finely chop the chocolate bar. Put in small bowl. Heat the cream until bubbles form. Pour over the chocolate and stir until the chocolate melts. Let cook, then spread over pie. Cover and refrigerate at least 2 hours before serving. Possible garnishes: A row of chopped peanuts around the outside edge, or mini-reese's peanut butter cups, cut in half. I didn't use either. So you substituted almond flour for the 3 c. AP flour, and Swerve for the sugar, but didn't add xanthan or anything else as additional binder? The recipe contains so much "flour" that I believe additional binder would be required. About the chill time... assuming you did chill for 1+ hours, I suspect you would have better luck if you made into balls and then chilled. In general, it's better to bake gluten-free at slightly lower temps and for longer time. ETA: I'm not convinced that key lime with all almond flour would be a good flavor combo anyway.

Cathy - yes, KTP is right off the Turnpike from the Kittery Exit (rt 236 I believe). BTW - they have a Flo's Hot Dog stand in the parking lot of KTP now - they are good there, but honestly, I think the ones at the original stand on RT 1 in Cape Neddick are still better - I don't know why or what the difference is, but I think it has to do with the steamed buns at the original Flo's. When you try a Lust Bar - tell me what you think!

Goldgirl - I'm not sure if I *need* $50 worth of Lust Bars, but I bet I can figure out an order from KTP for Christmas that will meet the shipping requirements and I can get the Lust Bars shipped along with it. LOL!

Geez, I NEED to find more time to post! Another near miss with a CF member! Alexa, we go to Kennebunkport every summer for a week or two. We probably overlapped on this trip! I've skipped the homage to Kittery these past couple of years...BUT I WOULDN'T HAVE IF I'D KNOWN ABOUT PEANUT BUTTER LUST BARS! LOL!! Okay, now I've gotta have some!

Thanks Alexa! I'll contribute to the taste test.

I am going to Maine with 3 friends, I'll further impress them with the knowledge that I gain from foodie friends! I'll casually say "Oh, pull in here. I need to buy a few Lust Bars; this is the only place you can buy the other than internet order."

Oh drat! Momto4kids - we were in Ogunquit, my home town. We definitely could have gotten together. We were actually at Federal Jacks for beers one night! There is still time to coordinate travel plans better for next year.....

Terri! Yes, there is lots of stuff I would love to order! I bought a bunch of stuff on each visit (3 total) since they were having a "tent sale" (no, not a sale on tents, a huge tent in the parking lot with clearance items) and kept adding stuff to the mix. DS#1 got another snowboard, DS#2 got a few sweatshirts and tees for school this year, and DH bought some sort of outdoorsy stuff that I dont even want to know what it is for. LOL!

Truthfully - the Lust Bar was the best purchase of all! (Except for my "Wicked Efficient Maine Coffee Mug")
