I wouldn't say I'm an over achiever, but I do like lots of detail so I'll go with Colleen and do both. Plus since I haven't participated before, the more info might make it easier on my partner. Please tell us a little about yourself and your eating and cooking style. Who lives with you, favorite colors, hobbies etc. I live with my DW in an old [circa 1825] house with our dog and 8 cats. We've been together 31 years. In one of my several incarnations I was a chef so our cooking depends mostly on how mobile I am. Sometimes I do quite a bit of the cooking and at times most is left to Christy. Luckily she's learned much during our 31 years together. I'm half Italian so I do cook lots of Italian, but love non hot Mexican, regional American, French, Chinese, etc. My favorite color is purple and the non color black. I'm also an artist and draw, sometimes paint watercolors or sculpt. I crochet in a very basic manner and know only basic knitting stitches. Love to garden but can't do too much anymore. Luckily I'm surrounded by the best of the Garden State for food needs and also lucky that I concentrated on perennials when I did garden more. Your favorite cookbook. Types of cookbooks you always look at. Do you like to write in your cookbooks when you find you need to alter a recipe to make it work or do you believe books should not be written in? My favorite all time cookbook is James Beard's American Cookery. Good recipes but I love the way he wrote. I have a extensive cookbook collection and love all types of cookbooks. Favorites are the old time pamphlet cookbooks, to the many incarnations of the Betty Crocker Cookbook. I too read cookbooks for pleasure. I do write in them and love used cookbooks that others have written in. Do you like jam? Love it. Do you like jelly? Very much so. Apple is a favorite. Do you like marmalade? Not so much. Do you like pickles? Not spicy but do love dills. Do you like spicy food? Well spiced, but not hot. I don't eat black pepper if I can help it, but can eat a bit of cayenne much easier. What are your favorite fruits? Any you do not like? Love fruit and can't think of any I don't like... ah.. except cantaloupe. Do you have a strong sweet tooth or you more of a savory person? I do have a sweet tooth. 1. Where do you live? I live in a tiny town in rural New Jersey, surrounded by farms of the horse, tree and food varieties. 2. Do you grill/eat outdoors often? Do you pack up a picnic basket or typically eat in the yard or kitchen? We grill fairly often in the summer but then eat indoors. 3. What colors do you use on your porch/patio/outdoor eating area? Not really any particular color. 4. Do you use your regular dishes or do you have special dishes/serving ware for outdoors? Or are you a paper plate/paper napkin kind of girl/guy? Depends. I don't like using paper products too much but when I'm not getting around Christy likes to use paper plates so she doesn't have as much to wash up since we don't use a dishwasher. I do use cloth napkins though. 5. Are your summertime gatherings more casual or formal? Casual. 6. Do you like to try the latest kitchen gadgets? I love gadgets and have lots. I like to collect old/antique gadgets too. 7. What are your favorite summer drinks? Desserts? Snacks? I drink seltzer as my continual drink. Raspberry. Unsweetened only. I have a 2 gallon crock that I make iced tea for the summer in or lemonade. Neither of us really drink alcohol any more although we keep some around. I'll drink Asti or champagne but don't like other wines. Desserts we eat mostly fruit, but I do like to bake and we like most anything with lemon, chocolate or other fruits. We make ice cream fairly often in the summer. Snacks consist of dark pretzels or a hunk of very dark chocolate. I don't care for milk chocolate, plus the dark doesn't seem to affect my glucose levels. Smiles. 8. What are your favorite summertime cooking/eating/entertaining activities? Do you spend time boating, at a cabin, around a campfire....etc.? We haven't been doing much the past couple years but we like to rent a cabin on a lake or down the shore when finances allow. Mostly we just love to lounge around and read, eat Jersey tomatoes and white corn and play with our animals. 9. Do you garden and/or grow your own veggies and fruits? Are you one who likes to can and preserve? I love to garden but don't do much anymore. I do have several friends who have produce stands on their farms so it's easy and close to get great veggies and fruit. I like to can but have done more freezing lately. I plan to get out the big pressure canner this year though. 10. Barefoot or flip flops? Always barefoot whenever possible and sometimes when not advised. Smiles. I've been known to run outside in the snow barefoot for a few minutes. We always kid about how hard it is to get me in shoes. I like to say my feet are claustrophobic. Smiles. Hope this helps.

egganddart: Cottage Garden Forum....you look under Garden Forums. The recipes are in the Conversation section. You are probably looking in the Home Forums. My son and DIL are chefs and are at a local restaurant owned by a friend. If you are interested it is YellowHammerRestaurant.com in Waverly AL. I have heard his stories about the huge Hobarts they had in the Marines when he was in the service. He uses a KA now since he doesn't have to cook for 800 anymore LOL> I agree that refined carbs are pretty bad. Like you the complex ones are the ones that fire my engine. Amy I know there are Rails to Trails up there and we have them too here. They are really catching on everywhere. There is a magazine that comes out and all it has in it is R2T all over the US and Canada. Great magazine. I have a great selection of trails from 15 min to 1 1/2 hrs to choose from. Here goes: Bartram Trail - Tuskegee Nat'l forest Pine Mountain Trail - Pine Mt Ga McIntosh County Park - Carrollton Ga Sweetwater State Park - Georgia Cheaha St. Park - Alabama Oak Mt State Park- Alabama Chewacla State Park- Alabama I think that is a pretty complete list. I go to the Bartram trail the most as it has several different sections. Upper which is 4 miles out / 4 back. Lower which is 9 mi out/9 back, Pleasant Hill which is rolling and combines dirt road and trail for 4 out/4 back. The Horse Trail which is 14 continuous and can be made into loops with upper Bartram if you know the way. I mostly go alone these days . My best friend moved to Carrollton ga and he and I try to run together 1x a week sometimes 2. We are planning a road trip the end of March and will combine running trails in Fl with mt biking and Blue Grass music at Live Oak. I have to make my fun where I can as there are no "play pals" around that want to do this kind of rougher stuff. They all want to be on roads and watch their GPS for the number of miles and how fast they go. I got away from that years ago and now do it 'cause I can and 'cause I work on stuff in my head while I run. I have done 24 UltraMarathons, from 50K to 100 milers. I loved that but it got so expensive to travel and so I just do what I can now. If you Google "Maryland Trail Running" there is a bunch of stuff. One in Towson and another one I didn't recognize. There is also an Adventure group in Catonsville, where we used to live in 1973!! If you tell me what town I can find more specific stuff. Usually state parks are the best. Also UltraRunning Magazine list all the races by state and the race directors all know the best trails and you can hook up through them. Let me know if you want help or more info. Caroline

Kitchens are very personal to those that use them. One cooks dream kitchen will be another cooks nightmare. Fingers crossed in two years time I will be allowed to build MY dream kitchen in our current house. Any line cook/professional chef will feel at ease here, but most people on this forum would be shocked. I am in a very unique situation where my wife has a very well paying job that means I do not have to work to put food on the table. This is not to say I could not find work, as 13 years in the Australian Army (retiring as a Major) and four years as a Finance Professional (two finance degrees, the highest a Masters) have left me with marketable skills. After moving to Dallas TX via five years in New York City, from Sydney Australia, I was looking at short courses to improve my home cooking. Not finding any courses that were of value I enrolled at Le Cordon Bleu and completed a 15 month Culinary Associates Degree in 13 months then worked in a five star restaurant for nine months. This was all to improve my home cooking. Kitchens for me are a place of work. If you want to socialize there are other rooms in the house for that. If you need to do homework, there are other rooms in the house for that. If you are in my kitchen you are cooking and/or cleaning. By their nature kitchens are hot, noisy, dangerous places. Pets and very very young children do not belong in the kitchen as they pose a risk to themselves and others, both through injury and food contamination. My kitchen will have a commercial range hood. I'm not talking 27" deep 48" wide 1,000 cfm, but a 48" deep 9' wide 2,500 cfm hood covering the entire hot cooking area. The hot cooking area will have one gas wok burner and outlets/space for two 3,500w (240v) portable induction burners, two 1,800w (110v) portable induction burners, one 240v counter top deep fryer, two immersion circulators (110v) in their water baths, and a commercial combi oven. Portable burners and the like allow flexibility in the kitchen and increase prep counter space. Most of my kitchen will be stainless steel with open shelving. It might not grace the pages of Better Homes and Garden, but it will be a bullet proof kitchen that is easy to clean. As much as possible the kitchen will be a separate room, NOT open the the main living areas. For me kitchens are food preparation areas with other rooms for food eating and socializing. A separate kitchen allows the noise, heat and smells to be contained in one room, not spread throughout the house. This kitchen will match my cooking style and methods. I hunt and have a chest freezer full of venison, rabbit and squirrel I harvested myself. The freezer also contains sub-primal cuts of animals that I buy in bulk. I much as I can I butcher and process my own meat and make sausage from scratch. I make all stocks, broths and sauces from scratch. I need large prep tables that are easy to clean to do this. While I do not consider my cooking methods cutting edge, I do own and use equipment not often seen outside professional kitchens. I cook Sous Vide for almost every meal. I use immersion circulators to cook most of my proteins and I use a vacuum chamber sealer to seal product in plastic bags. For those that have seen the five volume cookbook Modernist Cuisine, I can prepare most of those recipes with the current kitchen tools I own. My dream kitchen will allow me to cook them all. I rarely cook one pot wonders. A normal mid week meal, for just my wife and I, will be one course with a protein, sauce, two different vege and a starch. I require five separate burners to heat the food for plating - one for each item. I will/have happily spend/spent 6-8 hours a day in the kitchen for 3-4 days preparing a themed 9 course tasting meal (paired with wine) because one friend from out of town is/was coming over. I enjoy preparing, cooking, plating and serving food at home that is 5 star restaurant quality. When people ask me what do I do, I say I am a Personal Chef to my Wife. I can count on both hands the number of times per YEAR that we order take out and/or eat at a restaurant for dinner when in Dallas. A kitchen is where cooking occurs. While many people forget it, cooking is a very serious business. When you make mistakes in a kitchen, at best people go yuk and a pizza is ordered; worse case people die. To reduce the possibility of food borne illnesses, the kitchen needs to be an area that is separate from the main area of the house. It should not be a thoroughfare for the family and pets traipsing from the carport/outside/garage/etc to get to another part of the house. The materials the kitchen is made of need to be easily cleaned and sanitized. If you are scared to use a pressure washer on them, it is not the right material. My dream kitchen is most peoples nightmare. It is industrial, noisy and tight. Any aisle wider than 36" wide is too wide, any wider I would have to take a step to reach something - that is inefficient. The lighting will be bright and daylight balanced. I spend my pretty-mood-lighting-funds on the lights outside and in the great room, not the kitchen. The only view in my kitchen, other than the four walls, is the TV in one corner. The best views in the house are when you are sitting on the back deck with a cold beer in both hands, not standing at the sink washing a stack of dirty pans. A "cook's kitchen" is one where any cooking occurs. I have friends with kitchens costing $200k+ that only get used to heat precooked purchased food on Thanksgiving - I do not call this a cook's kitchen although it could be. Another friend will prepare, from scratch a 3 course plated meal for 10 in their 800 sq ft NYC studio apartment. The "kitchen" is a bar sink, 2 feet of counter space, 1 hot plate, 1 toaster oven and a dorm fridge. What constitutes a "cook's kitchen" for me is one that I am willing and happy to spend many hours a day, day after day in. For me this is commercial kitchen in a residential home.
