Best way to keep the sweet in sweet corn

When freezing: Freeze with the husks on in gallon zip locks. You can get 4 ears to a bag if you trim the stem. Then, in the middle of winter when you want that sweet corn treat, just thaw in cold water for a couple of hours and put on the grill.

It is amazing ---- tastes as sweet as freshly picked!!!! I have done this for years and always freeze enough for the whole winter. (Yes, the downside is lack of adequate freezer space - not a problem here.)

I have tried that and it does work well. Lack of freezer space here though.

Tried it once. Not so good for me. I take it straight from the field, save a few for grilling in the husk, a few for the next night shucked and 2 min in a boil. The rest is just a
dunk in boiling water for 1 min, let cool a bit, then cut off the ear and freeze with a FoodSaver in small packages. Takes up less space and much fresher flavor for me. I use it all winter in soups, etc. The cob is such a dry core and not really necessary but if it works for your freezer space...
Our field corn is so good right now and 13ears for 2 bucks...off the ear is tiny space compared to on the cob.
Maybe keeping in the husk is your good tip...i'll try a few since we grill even in the snow. But freezing 6 dozen?, haha, i can't see having an extra freezer for that!

Only certain varieties of sweet corn will have their flavor affected by a nearby field corn planting. These are the ones labeled "super-sweet," "sugar-enhanced," etc. That's why some of the advice above is incorrect -- though it would be true for "ordinary" vegetables (and non-enhanced varieties of sweet corn, for that matter). You could try timing your planting to avoid cross-pollination, but I wouldn't rely on starting indoors; direct-sown corn catches up quickly to transplanted. Or simply plant a variety of sweet corn that doesn't become starchy if cross-pollinated. Some people prefer these; their disadvantage is that the corn must be eaten very quickly after harvest, while the enhanced varieties can keep their sugar for days. Indian Corn is NOT sweet corn for eating fresh, it's for grinding into corn meal. You can make "elote" (boiled green field corn), but it doesn't taste much like sweet corn. I don't bother with corn because it's too much work and space for the amount of food you get.

I've just begun reading that book. I never got a chance to start earlier in the year but finally broke down and made time a week or so ago. (I usually save most of my reading for late fall/winter when I'm not up to my eyeballs in chores.) I'm only a third of the way through the book but am love, love, loving it! If only I could keep my eyes open longer while reading in bed, I'd be further along. I can't wait to read her take on flour corn. Thanks for the link to her site. I didn't realize she had one (or I did and forgot). So, George, have you experimented any with flour corns yet? I'd love to hear your take on it. I remember you mentioning wanting to try parching. With the beef, pork, chickens, garden, there is no freezer space at all for corn on the cob, so we eat what we can fresh and then blanch and freeze the kernels. I freeze the bags flat and then stack them up, that's my space saving tip on this thread! (grin)

I do wish I had space for some on the cob, it sure would be less time consuming as well.

I put up corn every year, but I cut it off the cobb and blanch it. It is home grown, not chemically sprayed or altered and it will have worms, not every ear, but some do. We shuck, silk and put it up cream style. Some of the real good ears I put up whole.
