Diane, George (Macmex) gave me some Indian Corn seed last year and for the first time we raised corn for meal. Got over 30# of shelled corn from four 50ft rows. It made good meal, a bit sweeter than the yellow corn I have been using, so this year planted some more and plan to eat a few ears in the green stage. If you would like some seed, let me know.

I already have a couple of George's corns -- Mesquakie and... I can't think of the other's name right now but it's a dark one. I grew the Mesquakie last year and loved it but it was a dent corn. I've not yet grown the other but I'm pretty sure it's a dent as well.

I'm looking for a true flour corn but thanks very much for your offer!

Mesquakie is the one I have. When you find the flour corn, come back and let us know where. I didn't know there was a special type. Thought you would just grind more finely for flour. Which is what I do cus I don't like gritty cornbread.

Sandhill, linked below, has a nice selection of the flour types. I think Victory Seeds has a couple. There are a few places with flour corns out there but I'm just lost with all of the choices since I'm new to them.

Carol Deppe has a WONDERFUL discussion on the various kinds of corn kernel structures (pop, sweet, dent, flint & flour). She discusses which are best used boiled Vs baked and even flavor differences between colors.

I've just begun reading that book. I never got a chance to start earlier in the year but finally broke down and made time a week or so ago. (I usually save most of my reading for late fall/winter when I'm not up to my eyeballs in chores.) I'm only a third of the way through the book but am love, love, loving it! If only I could keep my eyes open longer while reading in bed, I'd be further along. I can't wait to read her take on flour corn.

So, George, have you experimented any with flour corns yet? I'd love to hear your take on it. I remember you mentioning wanting to try parching.

Well, I haven't planted any in over a decade. When we lived in Mexico I grew flour corn for grits. We liked it a lot. It was SO EASY to grind! Someday, perhaps, I'll grow another flour corn. Deppe gives some very intriguing observations on the different uses for flour and flint corns. We'd love to try some of her recipes. But actually, we were content when we had only Mesquakie Indian corn. We've been content (albeit somewhat hassle & challenged) growing Cherokee Squaw. It's a challenge to grow more than one kind and keep them from crossing, so, we'll see.

I do wish a lot more home gardeners would grow some of these workhorse corns.
