Terri, this sherbet comes from Charlie Trotter; it calls for apple juice - I used apple juice concentrate -and wouldn't you know it- I forgot to dilute it first. Well, we foud this mistake punctuated the sherbet with tons of flavor, and it was especially good on Apple Crisp. I'm sure Charlie would approve, but it's your call.

Apple Buttermilk Sherbet

3/4 cup buttermilk

1 cup apple juice

½ cup simple syrup (1 cup water + 1 cup sugar. Bring both to a boil. Remove from heat, and cool).

1½ tablespoons corn syrup

Combine all ingredients for the sherbet and refrigerate until well chilled. Freeze in ice cream machine *

*I have a Cuisinart ice cream maker and for this recipe, I let the machine run for 35-40 minutes. Then I popped it in the freezer for just a couple of hours before serving. If you let it sit in the freezer overnight, soften in the microwave for about a minute before serving, or, allow the sherbet to soften in the fridge, checking after about 15 minutes.
