How to prevent home made ice-cream from freezing

I recently bought a ice-cream maker and tried my first batch by just adding plain soy milk and acai/pomengranate juice.

The flavor was great, but the consistency left much room for improvement. And the main problem was that when I put the ice cream in the freezer it came out nearly solid and I had to cut it with a knife.

I am looking to make healthy ice-cream with no milk, added sugar, and few ingredients as possible.

Is there anything I could add to the soy milk and juice in order to make the texture more ice-cream like, and to prevent it from freezing in the freezer?
