9 cups Flour -- sifted
1/3 cup Baking powder
1 cup Powdered milk + 2 TB
4 teaspoons Salt
1 3/4 cups Vegetable shortening
Sift all dry ingredients. Cut shortening into flour until mixture
resembles coarse cornmeal. Store well covered in a cool, dry place. You can use this for waffles, pancakes, biscuits and for coating chicken. No sugar has been added to this recipe so that you can add what you want for the individual needs of your finished product.

Just be aware, you won't find that mixture (or any of the homemade recipes I've seen for Bisquick) to taste like the real thing. Bisquick has buttermilk in it. So you'd have to use dry BUTTERMILK solids, not regular dried milk, and add the appropriate amount of acid (cream of tartar), to get the same taste and properties of the purchased stuff.

FYI - you can buy dry BUTTERMILK, usually in the baking section of your grocery store. I usually keep a container in the fridge.

momj47, unfortunately, while I'm sure you can buy dry buttermilk in any grocery store in the US, my son is looking for things he can make with ingredients available in Kampala, Uganda!

dmlove -- Rather than first making ersatz Bisquick and then using it to make something else, I think I'd look for a similar recipe that doesn't use Bisquick. What is the original recipe for?

OH, I have a friend moving to Kampala, I'll ask her to bring some over!! She's still not sure where she, her husband and 4 sons will live, but they are excited about the move.

velodoug, it just a topping for chicken pot pie. (I doubt he'll be able to get frozen puff pastry either, so let's start with something simpler!)

momj47, when and why are your friends moving? My son just graduated from college, and he's working there for a year (on a study being conducted by a Stanford and a Columbia professor).

I could quickly & easily make biscuits or hotcakes for my family, but now I live alone, and I don't like the result when I cut down those recipes to make just enough to top a pot pie or make just a few hotcakes. So I decided to use a baking mix, but wanted one without Bisquick's or (equally good) Jiffy Mix's preservatives.

The recipes I tried w/ powdered milk were not good, but SACO Buttermilk Blend (w/ buttermilk & whey) is available in every supermarket, and their baking mix recipe (phone number on the label) really is good. It's a dry product that can no doubt be shipped to your son. It comes in a 12-oz tub or in small packets, w/ the latter recommended for anyone who won't use it up very quickly.

For anyone who cares, I leave fat out of the mix per se, and add it the way I want for each bread. For hotcakes, I emulsify the egg yolk & fat -- usually bacon or sausage fat that was refrigerated, so it must be left out to soften before doing this -- then add that & the egg white & milk to the dry mix; that way, all my hotcakes are equally fluffy. For biscuits, I cut chilled butter -- I don't use hydrogenated fats -- into the dry mix.

I'm not sure, they were supposed to leave last week, so they may have already left. The parents are physicians and they will be doing medical research, I think on TB, in Uganda, for about 3 years.
