Most likely leftovers from last night. I made a Mexican type meal... soft shells filled with refried beans and taco meat, then a little bean, tomato, cheese sauce on top, along with mixed refried beans and black beans with hot peppers and lime, with a side of rice cooked with tomato, chilis, onion, and garlic. It was yummy.

Well, I tried the No Peek Casserole last night for the first time and it was a hit! So tonight I think I'll try the Tater Tot Casserole. I'm all for one dish meals. :o) If Jammer has to be gone tonight then I will just eat leftovers.

Haven't decided where I'll have dinner for lunch, today!

I'm thawing out fish (pollock), going to sautee it in a frying pan with a little canola oil and a Mrs. Dash spice I picked up last time I went shopping. Haven't decided if I'm going to dip it in a little flour before I cook it or not. Baked curly fries for Alex and Lauren, plain fries for me and soy beans in the pods.

I made a turkey breast on Saturday so I warmed up some of the leftovers and the critters and I shared that. I haven't made a turkey breast in years and it really hit the spot! I didn't even bother with side dishes. I pigged out on poultry!

A bit OT, I know, but Glenda, I know you eat out a lot. Do you have a lot of good places to eat? I've been coming across some nice little diners around here. Didn't even realize they existed anymore and it's been a pleasant surprise.

Baked beans and hot dogs

Monday is Beanie Weenie day...started out as a joke a couple of years ago, and we kind of like a canned beans and hot dogs supper after a busy weekend.

Oh, yes, I do! Friends tell me I should apply to become a restaurant reviewer.

Know what days certain restaurants serve my favorite. I am known to TRAVEL. Why not? It's my pleasure.

Hmm.....I would like that for a change sometime, Monica.

I made a soup yesterday, and it has been chilling since so that I can remove the fat easily. It has carrots, parsnips, turnips, celery, onion, dill weed all cooked with the chicken. Now I have to defat it, remove the chicken and take meat off the bones, and throw the rest in the blender to puree it. Sounded good, but we will see!

Phyllis--that sounds healty and wonderful. If you like it, would you post the recipe?

Leftovers.... Made a bar-b-que pork roast yesterday with
mash potatoes and green beans.

Leftovers... barbecue pork ...I pulled it off the roast last night I cooked some limas to go with it...rolls and a salad and that's it...

Beef and broccoli or asparagas..what ever looks good when I get to the grocery. I have the beef already stripped and marinating in lemon juice, tamari(like soy sauce)and some fresh garlic. It will be served with veggie fried rice too.

I have part of tomorrows dinner done too. The filling for my 3 cheese "chicken" enchiladas...although I too cooked a pork roast and so the "chicken" is replaced by pork.
Tomorrow, I'll have to put the rolled filling logs into the tortillas, and make the enchilada sauce...and bake it.

Homemade CHicken Pot Pies. They took longer then I expected, but that was fine since they were just coming out of the oven as DH got home from work. We joke that he likes dinner if he burns his tongue eating it!

Tomorrow is probably Cheese Ravioli & Sauce.

my gosh. everything sounds better than what I am fixing! We have been working outside since 8 this morning, I just came in! I just decided it's going to be Campbells soup for dinner..

Dh offered to cook tonight....yippee! No problem I say! He's cooking pork chops, baked potatos and beets.

I love beets!! I'll have to have them soon.
