What is your #1 favorite pie?

How about a crisp instead of a pie? You could even make individual servings in ramekins or tart pans if you don't want to make all of them gluten-free. 6 tablespoons room temperature unsalted butter 1/2 cup gluten-free oats (oats certified free of cross-contamination with gluten) 1/4 cup gluten-free all purpose flour mix Combine topping ingredients and use a fork or pastry cutter and blend until butter is evenly distributed and the mixture is crumbly. Sprinkle topping mixture evenly over fruit. Bake for 30 to 35 minutes or until the top is golden brown. Cool for at least 15 minutes before serving. NOTE: The ingredients are readily available anywhere they sell gluten-free ingredients. Our Wal-Mart has a good selection of gluten-free ingredients and mixes and I'm pretty sure they have a pastry-type mix. Simple Tart Crust (source: The Gluten\-Free Almond Flour Cookbook \- by Elana Amsterdam) 1\-1/2 c. blanched almond flour (Honeyville Grain Almond Flour is suggested in the book, but other brands, such as Bob's Red Mill, should work) 1/2 t. sea salt 1/4 t. baking soda 1/4 c. grapeseed oil (or vegetable or coconut oil) 2 T. agave nectar (or honey) Preheat oven to 350\-degrees F. In a large bowl, combine the almond flour, salt, and baking soda. In a medium bowl, whisk together the oil and agave nectar. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Press the mixture into a 9\-inch tart pan. Bake for 7\-10 minutes, until golden brown. Remove from the oven and cool completely before filling. The link below has a gluten-free pastry that uses three simple ingredients: rice flour, shortening, and water. You can make your own rice flour at home in a coffee/spice mill. It's best to use short- or medium-grain rice for rice flour (white or brown rice - which ever you like), instead of long-grain rice for bake goods, but in this recipe long-grain rice will probably work. I personally don't like nut crusts. They are often greasy and can burn easily. Hi Kids, Thanks for all of your input. Chi83, excellent idea! ALL in the name of research, of course. I am interested in some of the suggestions and think that I will try most of them. I have been using the ready made Pillsbury crust for several years and while they are fine for regular pies, I feel the need to put extra effort into these. I find them to be a bit tough with not a lot of flavor but very easy. They have also resulted in my family enjoying more pies than they would have otherwise. I have used them for almost every pie I have ade for a number of years, since they were sold in the square box, folded in 1/4s, I want to try somthing a bit more special. I remember making crusts that had great flavor are were flaky and yummy. That is what I am going for. I have an old standby that called for an egg and vinegar that I could go back to but I think I will try one of the lard & vodka combos first. I will have my own *test kitchen*...all in the name of research, of course. So, thanks, Kids. You have given me some good direction. Thank you all for your help. sooey

I used to make Martha Stewart’s pumpkin cheesecake because my oldest son loves it. I made my own pumpkin purée from a pie pumpkin, but haven’t made it lately because it’s lots of work. I saw this recipe recently in my NYT recipes email, and thought it sounded good and a little different. Success! Everybody loved the look of the Chocolate Chocolate Chocolate Thanksgiving pie. What made it Thanksgiving was a little 3D chocolate turkey in the middle which I'd bought from the farm just because it was cute, before the assignment was chocolate pie. So, I made the chocolate crust according to the recipe I've used before, but I thought it was too salty. I just might be too sensitive to salt just now.. The chocolate Dories were salty too and I only used a pinch. (Named for Dorrie Greenspan who declared Americans didn't have to worry about feuilletine when they have cornflakes.) So the crust had raw cocoa powder, the ganache recipe called for bitter-sweet for which I used Baker's, I wanted a bit of a lighter flavor for the whipped cream so didn't dare use Valrhona, but I have an open box of Trader Joe's cocoa powder that's milder. For the Dories I just used the cornflakes (no nuts or raisins as per the recipe) and some little dark chocolate squares (chip size) in a bag of Whole Foods 365 which I found in the pantry. I added just a whiff of my favorite Ethiopian spice bland which has fenugreek and chili among other things. But just enough to bring up the flavor without being specific or spicy or anything. But I think it would have been better without the salt. So, I guess there were really five kinds of chocolate, rather than three, but it does get redundant, I brought the extra chocolate whipped cream and a good amount of that was eaten too. :) The ganache tastes airy, but I don't know why.. It's basically thin fudge. I took it in a pie case in my German styro cold box with a couple of 9" Freez-r-brix. They were perfect for keeping the pie case from sliding around, as well as cold once there. I put them underneath the pie case to make sure the ganache stayed chilled and solid. It was easy enough to cut but firm. The turkey was too tall for the case and I didn't want the Dories to get soggy, so just brought those in a bag and finished the top as dinner was being cleared. I did the whipped cream before breakfast so it would firm up in the fridge. I'm not great at piping, and tried my piping gun. It worked, but each round got less and less successful. Still, the pie looked kind of sad without the decor, but it was soft as directed, and the cream was not a whole layer. The Dories were just at the back between the cream spots, and easy to brush off--but wonderfully crunchy for those who wanted to eat them. The cousin who asked for it just ate the ganache. :) And loved it! Lots of compliments were had. Thank-you, all of you, for your input. it all led to the success.

Or do you mean a fudge pie? In the south, there are chocolate pies topped with whipped cream or meringue, and the crusts vary. I have seen crusts that are pastry, graham cracker and my mom's oatmeal (only she makes this one. Dunno where she got the recipe.). "Chocolate pie" means the filling is pudding like in consistency. "Fudge pie" is brownie like in consistency. So which is it? I also make a pretty mean fudge pie. Come to think of it, in order, my favorites pies are:

Chocolate meringue
Fudge
Kentucky derby (made with mounds of chocolate chips)

So I guess I am a true chocoholic. Don't get me wrong, I'd eat any fruit pie there is without batting an eyelash, but I make and eat chocolate as my first choices.

Hard choice to make among a few favorites - strawberry/rhubarb, key lime, coconut cream, pecan....

Here, too, every year I choose a birthday pie or tart over birthday cake.

Okay, if I must choose, it will be Bumbleberry Pie, which has blueberries,raspberries,strawberries & cherries in it.

Sorry, I can't limit it to one...lemon meringue and coconut cream with meringue. Also, if anyone remembers Tippin's Restaurants...I think it was called German chocolate. Yum!!

Well, I love pecan pie, all berry pies, peanut butter pie, and cheesecake. The latter has a crust, and it doesn't rise, so it is in the pie category, right?

Sorry, I couldn't choose just one pie. I'm a rebel.

I agree with Caliloo, must be blueberry pie. With the berries picked in Machias, Maine. Best pie ever. DH and DB picked (harvested) them one summer. Back breaking work, but oh so good!

Summertime pie: Hands down, Sour Cream Peach pie, made with fresh peaches (old, old recipe from my Grandmother's Kitchen Klatter magazine or Capper's Weekly dating back to the mid 1950s)

Spring time pie: Rhubarb pie

Winter pie: Cherry

I can't pick a single pie I like best. A home made pie is my favorite dessert, without doubt.

Hands down Dh's Chocolate Meringue pie! But he prefers apple. I like apple, but it's not my favorite. Cake or pie? It depends on what kind of cake and what kind of pie.

Could there be a virtual pie party in the future?

I'm not a big fan of pie-- probably because I don't care for pie crust or gooey fruit mixtures. Now that you know, please don't excommunicate me from the CF! That said, a graham cracker crust is right up my alley. My faves are Sweet Lady Jane's lemon meringue tart (sans crust), and my mother's french silk or my pumpkin chiffon. In a pinch, apple with a crumb topping is delish!

Favorite? Probably pumpkin chiffon!

Well, pumpkin seems to be leading in the poll. But I have to say that it's the only kind of pie I ever made, ate or heard tell of that I absolutely despise. And everyone in my family feels the same way. At Thanksgiving, we are a pumpkin-free zone!

We all have the I-hate-cilantro gene. Do you suppose this could be similar? It sounds so good, and everyone else in the world seems to love it, so I realize the fault is with our tastebuds. But pumpkin just makes us all gag. Strange...

You're not the only one. My husband won't touch pumpkin pie. My kids adore it. Me? I can take it or leave it. Mostly I leave it because I just don't think it's worth the calories.

Craftyrn, it's been so long since I've had Elderberry pie, I'd completely forgotten it.
Now I've got a serious longing. . .
It is so-o-o-oooo good.

Lowspark, the Bayou Goo sounds very much like a dessert that has been popular around here for some time.
Usually called ". . . . Delight"
Chocolate, Pistachio, coconut, whatever.
The nut crust, a layer of sweetened cream cheese, a layer of pudding of your choice, and a layer of whippped cream, decorated with chocolate curls, toasted coconut, whatever compliments the flavor of the filling.

So I imagine the big secret to the Bayou Goo is what is in the custard to make it special.
A bit of rum? Coffee? Bourbon?
Wish I could taste a slice to try to figure it out.

This certainly gives me an idea to try for the next family gathering.

And if we are specifying a summer pie, I'd have to say Millionaire Pie.

I always requested pie instead of cake too, but I didn't specify flavor. I don't care for cream pies. But my mom rarely, if ever, made cream pies so I was safe there.

Rhubarb - hands down - unfortunately it has been years since I had one. Can't find it in my part of TX and it won't grow here either at least not successfully by me although I haven't tried it in the winter. I'd settle even for buying some frozen.
