Finally made whoopie pies...

Don't you love making something you've had FOREVER on your to try list and it's just as good as you thought it would be? I'e been wanting to make whoopie pies for a long time and when I came across this recipe on epicurious, I decided today was the day. They were easy, and very very good. And if I don't find something to do with the extra frosting, I'm pretty sure I will eat it all straight from the bowl :)

Now that we have two Carols, I will say I am not the one making jelly. It has probably been 20 years since I made jelly and since we probably use 4 jars a year, I'm not likely to become a big jelly maker. I was, however, intrigued with the pepper jelly being made after Dawn said how good it was spread over cream cheese. Now I might like to spread that on something, so I will probably try growing a few habanaros next year and give that a shot. I have to jump in on the pie crust issue though. Mine may not be the "most perfect" piecrust in the world but it is very good and oh, so easy. I call the flour measurement (scant) because I probably use about a tablespoon less than the measurement. This will make a regular size double crust pie or two one crust pies if using those disposable pie pans. 2 cups (scant) all purpose flour 1 teaspoon salt 1/2 cup cooking oil 1/4 cup buttermilk Mix the dry ingredients together then mix in the wet ones. This is soft crust and you can stir it with a spoon. When you have a big ball, put half between two sheets of waxed paper and roll it out. Lift the top sheet of paper to release it from the paper, then put it back on loosely. Lift the entire crust with both sheets still attached and turn it over on the counter. Your can pick it up by the back and it doesn't fall off (on this turn). Now release the second sheet the same way except DON'T put it back on. Now this is the hardest part. Put the pie plate close to you and lift the pie crust and paper together. You need to put your hands 2/3 of the way back on the crust (and bottom paper) and let the back 1/3 fall over the back of your hands and the 2/3 in front of you hands. It will still be attached to the paper, but only lightly, so put it onto the pan, paper side up and slowly release the paper from the crust after you have it all placed in the pan. If you get a hole in it, no problem, just patch. Make the edges pretty and it is ready to bake or use depending on the pie. One bowl, one spoon and the rolling pen never touched the dough. It is also oil which I feel is safer than shortening. I know, I know, it sounds too easy. I have been doing it this way for around 15 years and have not once made a different pie crust, except for fried pies and one dutch oven class. I sent pies to Uniroyal with my DH once and five people asked for the recipe. I carefully made five typed copies and sent back with him the next day. He said they had it at the copy machine making more copies last time he saw it. LOL I never, ever, use sugar in the crust, but for a two crust pie I mix a little cinnamon and sugar together and sprinkle over the top crust just before it goes into the oven because it makes it pretty. When I make fried pies I use a recipe with an egg in it because I want the crust to be tough enough so the filling doesn't come out during cooking. I assume that was the reason for making that other crust recipe in the dutch oven because they wanted to be able to let it cool and lift the entire pie out using the parchment strips underneath the crust. Don't laugh until you try it. I will be very surprised if you don't like it.

sing along with me :-) first you spread, spread, spread your bread with peanut butter then marshmallow fluff to make a fluffanutter. alexa, they sound good. i saved the recipe. i'll have to try them. nina, in case it's ever pulled from the market, try this. although i would venture to say if you purchased a large jar and it got lost in the pantry for years, it would still be the same when you finally found it. i don't think they aren't going to make fluff anymore, i think there was a lot of hoopla about it having been served in some school cafeterias. Homemade Fluff 3 egg whites 2 cups light corn syrup 1/2 teaspoon salt 2 cups 10X sugar (confectioner's) 1 tablespoon vanilla In a large bowl, combine egg whites, corn syrup and salt beat with electric mixer for 10 minutes, until thick add 10X sugar. Beat on low speed add in vanilla, and beat until blended. Use this in any recipe called for marshmallow creme.

I found this one with the same ingredient list except the yogurt but those should be interchangable. Mini Banana Whoopie Pies (Adapted from Martha Stewart) For the batter 2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup mashed ripe banana 1/2 cup sour cream 8 tablespoons unsalted butter, softened 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 large egg 1/2 teaspoon vanilla For the filling 16 ounces cream cheese, softened 1 cup confectioners' sugar 1/2 teaspoon vanilla To prepare the batter Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking powder, baking soda and salt. In a small bowl, stir together banana and sour cream. In a large mixing bowl, beat together butter and sugars until light and creamy. Add egg and beat until combined. Mix in vanilla. Alternately mix flour and banana mixture into the creamed butter, beginning and ending with flour mixture, mixing just until combined. Scoop the batter into a pastry bag fitted with a 1/4" round tip. Pipe batter into 1 1/4" rounds onto parchment-lined baking sheets. Place into the oven and bake until the edges are a light golden, about 10 to 12 minutes. Remove and transfer sheet of parchment to a wire rack and allow the soft cakes to cool completely. To prepare the filling In a large mixing bowl, beat cream cheese until smooth. Add confectioners' sugar and vanilla, mixing until smooth and creamy. On the flat side of half the cakes, spoon about one tablespoon worth of the filling on top. Top with the unfilled halves to form a sandwich. Lightly dust with confectioners' sugar before serving. Makes about 36 whoopie pies.

I could never make a decent pie crust, until I found this recipe in an old "Joy of Cooking" cookbook. It is so easy, and everyone raves about my pie crust. FIVE-MINUTE PIE CRUST Sift into bowl: 2 cups sifted all-purpose flour and 1-1/2 teaspoons salt Pour over the top, all at once, without mixing: 1/2 cup salad oil and 1/4 cup cold milk or water Stir ingredients until blended. Form them into a ball. Divide into 2 parts. Flatten them slightly. Roll the dough between sheets of waxed paper to the desired thinness. Patch tears, if any, by sticking them together or by adding a small piece of dough. Remove top paper. Invert rolled dough, paper and all, onto a pie pan. Remove paper. Proceed as with any pie crust. Prick both bottom and top crust with a fork. Fill the pie and place the top crust over it. Bake in a hot oven--425ÃÂ for about 40 minutes. For a baked pie shell to be filled later, use 1/2 the ingredients. Bake it in a hot oven--475ÃÂ for about 10 minutes. We like the pie crust a little sweet, so I add about 2 Tablespoons of sugar (or Splenda) to the flour mixture.

Alexa, it tends to be a seasonal product, usually only available around the holidays. I've looked for it off-season on occasion and have difficulty locating it but can usually scrounge up a can or two from somewhere! :)

Apparently the pumpkin crops were destroyed by all the rain in Nov 2009 and our stores havent had any canned pumpkin since then.

Shaun, there's a pumpkin shortage here too, I didn't realize it until a few months ago when I tried to buy canned pumpkin and it was nowhere to be found. Sure enough, checking around resulted in my finding that there was a shortage, the Midwest lost most of the pumpkin crop (and a lot of other crops) due to the flooding last fall. However, harvest of this year's crop should start any time and pumpkin will be back on the shelves, hopefully.

My pumpkins did OK, last year, I've been wishing I'd have cnaned some, I sure will this year. I did find out, however, that my overflow of butternut squash takes the place of pumpkin pretty well. It's a bit milder, but still good in pie and bread, and probably, in whoopie pies. Now, winter squash didn't do all that well either, but if you can find that instead...

So interesting about the pumpkin shortage. I meant to look for it when I was at Wally World yesterday but I forgot. My mission is usually to get out of that place as quickly as possible :) I have some butternut squash that I guess I will freeze just in case I need a sub for pumpkin around Thanksgiving time. And I would LOVE to make the pumpkin version of these! Is your recipe posted on the forum Alexa?

Here you go! Hope you like them :-)

Pumpkin Whoopie Pies \

Cookie Cake Ingredients:
2 egg yolks
2c brown sugar
1c vegetable oil
2c cooked pumpkin (or 1-15 oz can)
1 tsp. vanilla
1 tsp. ginger
1 tsp cloves
1 tsp cinnamon
3c flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
Beat egg yolks, brown sugar and oil together, add pumpkin and vanilla and beat until smooth.
Mix in dry ingredients.
Drop heaping tablespoons of batter on lightly greased cookie sheets. Bake 350 degrees for 12 minutes. Cool on cookie rack. Mix filling ingredients and fill cookies like a sandwich. Makes about 18 pies.
Filling Ingredients:
1/2c butter
4 oz. marshmallow fluff
8 oz. cream cheese
1/2 tsp cinnamon
2 1/2c powdered sugar
1/2 tsp nutmeg

LOL I was craving pumpkin last fall when I heard talk of a shortage, so I bought some extra. Then I had my fill and now I think I still have 3 or 4 cans. Wish I could pass you a can. I haven't made the whoopie pies because I'm afraid I'll be the only one eating them.

Maybe DH can take some to work. :-D

Tracey, the pumpkin version is great. Thanks to Alexa for sharing a few years ago. I forgot to look today when I was at the store too. I did a google search and there is a lady selling cans on ebay. LOL Amazon had some organic available too.

Check for squash(the little boxes)in the freezer section...tastes enough like pumpkin for most recipes(to me, anyway).

Thanks for posting Alexa. I will definitely be trying these! Just out of curiosity, I checked for pumpkin at Kroger and Target and neither store had it in stock, even in organic. Still have to see if Walmart has it. Noinwi, I actually have some butter nut squash frozen already which I will be holding on to in case I can't get pumpkin at Thanksgiving!
