My Canning Weekend

Mmmmmmmmmm..

I just love this time of year!

Here's my 25 # of "canning tomatoes". I paid only $.45/lb. for them! I was pleasantly surprised at the quality. They could nearly pass for slicing toms! There were only a couple in the box that were really past their prime. I also picked up the peppers and garlic.

Most of the tomatoes were roasted with lots of garlic, carrots and Walla Walla onions to make KatieC's soup. I actually did three sheets, but here's the first two before they went into the oven.

I chopped more of the tomatoes and peppers up for Annie's Salsa.

Also made Cantaloupe Jam and Banana Nut Bread Jam.

Here' my counter by Saturday afternoon.

There's 13 half pints and 10 12-ounce jars of salsa, 15 pints of soup, 8 half pints of cantaloupe jam and 7 half pints of banana nut bread jam. It's gonna be sooooo good this winter!

Took a nap, then got up and picked LOTS of chard!

Chopped and blanched it:

And bagged for the freezer:

I needed to come back to work today to rest!!!
