Tell me do you freeze all that you make through the week? If so I would love some tips on how to keep breads "fresh" when freezing.

I have great luck when freezing fruit loaves , muffins etc but breads and rolls...not so much!

Chase, I bake on Thursday and Friday nights and do not freeze any of the breads I sell.

But, for myself, here is what I do to freeze yeast breads:

~ have bread baked completely and cooled on a wire rack

~ put bread in a plastic bag (bag #1) or wrap well in plastic wrap or foil - then, put in a heavy weight freezer zip bag (bag #2) and seal getting all the air out of the second bag

~ put in freezer to freeze solid w/o getting smooshed by anything else

~ keep up to 3 months, but the sooner you use it, the better

~ to thaw, take loaf out of bag and wrap in a clean paper towel, put back in bag #1 and let sit on counter until completely thawed - once thawed, remove paper towel from bag#1.

The paper towel is needed to absorb any ice condensation on or in the loaf. Your bread will not have a soggy bottom done this way.

Another thing I do is to cut 4-6 slices of the loaf, put them in a heavy zip bag, then into a second freezer bag and freeze the slices. You can fill several smaller bags with the sliced bread, then put all the bags into a larger freezer weight zip bag, seal getting all the air out and freeze.

I freeze yeast breads all the time. I wrap while still a bit warm, in foil tightly! Then put the foil wrapped loaf (loaves) into a freezer bag and into the freezer. To serve, I put a frozen loaf into a 300 oven, still wrapped in foil and let it "bake" for easily 30 minutes....45 is good....then unwrap and allow to sit in the oven for about 3 or 4 more minutes. Just like just baked....crisp crust and all. If you forget to get the bread in the oven an hour before your meal....jack the oven temp up to 375 or even 400 and cook for shorter period. Justs queeze to make sure it's thawed all the way through before serving.

The market is "supposed" to run from the first Saturday in May to the first Saturday in November. Mr. Brown who has a produce truck told me he has been there into November and no one asked him to leave. Don't know how much traffic he gets then, but he buys from suppliers, does not grow his produce himself. The town no longer has a grocery store, so maybe he gets more business than I would guess. He also has hoop cheese, honey, jams, and sometimes country ham.

Last week, it was announced that there would be no more farmer's market in my little town. I was saddened by the news. They have tried very hard, but could not make a go of it. I can go to the larger town, about 20 miles away, but it's at NOON on Tuesdays...Who goes to Farmer's Market at NOON??

Teresa, I'm sure there will be no farmers market tomorrow, Irene will be in the way. Stay safe, I know you are inland but the rain and winds could take out your power. Check in if you can.

I enjoy your reports also. Especially when I am home in Washington and have just been to our Farmer's Market in Walla Walla. I always buy bread, without fail. This week I picked up a bag of Ciabatta rolls and foccacia. I think what you are doing is wonderful.

I did not plan to sell at the market yesterday because I had to get my car inspected and get a new tire put on. I was at the station before they opened at 7 AM, so an hour later I was headed home.

We had gray skies, heavy clouds, and some gusty winds all through the day Saturday and some rain - lots of limbs and leaves down as well as tons of green pecans in the hull on my street. No reports of power outages in my area, but that doesn't mean there weren't any. I doubt that there were many vendors at the Gibsonville market.

Thanks for your concern. I am about 200 miles from the coast near Morehead City, so we often get high winds and rain depending on the path of the hurricane, but thankfully not often flooding in my area - and my home is not in a low lying area of the town.
