One more thing to do with cucumbers

yeah yeah I know what you are all thinking

All I can say is...even after I'm done with them*, there are still too many cucs in our garden...

I stumbled on this Mexican popsicle through the Kitchn blog, it ought to interest DH since it does have some heat. He has been making mojitos DAILY so we have lots of limes as well. I'll try it with Penzeys Chipotle powder since thats what I have on hand (shaddup)

Paleta de Pepino con Limon y Chile (Cucumber Ice Pop With Lime & Chile)

Makes about 5 pops

Â2 cucumbers (about 2 pounds), peeled, seeded and chopped

Â1 tablespoon sugar

Â1/4 cup fresh lime juice

Â1/2 teaspoon habanero chile powder (see Note)

Â1/2 teaspoon kosher salt

Instructions: In a food processor, pulse all but 1/2 cup of the cucumber until smooth. Strain into a bowl; you should have about 2 cups juice. Add the rest of the ingredients and pour about 1/3 cup of mixture into each mold. Freeze for at least 2 hours.

Note: Habanero chile powder is available at specialty grocers such as Whole Foods.

Per serving: 35 calories, 1 g protein, 8 g carbohydrate, 0 g fat, 0 g cholesterol, 217 mg sodium, 1 g fiber.
