DCarch - Some sous vide questions

No, I'm not going to try it myself. Last night I was watching "Hotel Hell" with Gordon Ramsey. (Yes, we were bored, tired, and not in the mood to think.) Anyhow, the hotel chef told Ramsey that several of the meat entrees were sous vide and then heated up for serving. I thought at first that the chef misunderstood what sous vide was and was just attaching a "fancy" name to pre-made, heat-&-eat foods. He admitted that the hotel restaurant bought the sous vide products and part of the reason for doing so was cost effectiveness. Both he & Ramsey kept using the term sous vide, so then I wondered about its application to large scale operations, the kind that provide meats to many restaurants.

Do you know anything about this? I imagine that mass-produced sous vide entrees would run into the same quality problems as any other mass-produced foods. Some manufacturers would turn out great food and others wouldn't. The episode piqued my interest, and I'm just curious.
