If I have to bake 30 potatoes

I know there's a cooking forum, but I don't know those guys so I thought I'd ask at the Kitchen Table.

I have to bake 30 potatoes for a dinner tonight. Individually wrapped in foil and baked in my regular kitchen oven. How long will it take? I wasn't sure if I should add extra time because of having 30 of them.

Yes I would give them extra time and also raise the temp a little.

Could you give some particulars? It's been years since I actually baked a potato in the oven (probably since I got a microwave).

Would you guess about 400 degrees for 1 1/2 hours?

I like them any way, whether wrapped or not, greased or not, baked at any temperature, it's all good. Oh, and Renee, at the restaurant we "slammed" them on the counter too. While they were still wrapped in foil, of course, then cut a slit in the foil and "pop" 'em open. Annie

Freezing Twice Baked Potatoes

I do this all the time. In fact, I just bought five pounds of potatoes to make twice baked for the freezer. I do what Tami does; freeze them solid then vacuum seal. Before I ever get started, I soak the potatoes for about 30 minutes so I can scrub them totally clean. I go ahead and carmelize the onions in butter, until they're nice and browned and there's absolutely no problem when the onions are cooked. Then, I deglaze the pan with the broccoli water, or if I'm not using broccoli, a little chicken broth. I often add sour cream to the stuffing mix, along with bacon, broccoli, cheese, and never had any problem with them being dry. I also don't bother to thaw them first. (My feeling is thawing them is what makes them watery.) Instead, I put them straight into the oven on convection, and they're ready to eat in about 40 minutes from frozen. If you do the extra step of crisping the skins after you've scooped out the potato before making the ''stuffing'', it really helps the end product. It's one of our favorite meals to POOF.

Baked Stuffed Potatoes 3 large baking potatoes or 6 smaller 3/4 c. dairy sour cream 1 T. grated onion 1 tsp. salt 1/2 c grated cheddar cheese Bake potatoes 1 hour at 400 Increase oven temp to 450 If potatoes are large cut in half lengthwise...for smaller potatoes cut x on top. Scoop out potatoe and put shell on baking sheet. In mixer, whip potatoes, add sour cream, onion and salt. Beat until fluffy. Fold in cheese. Put into shells. Can refrigerate or freeze at this point. If refrigerated, Bake 15 - 20 minutes at 450. If frozen, bake 400 45 - 55 min. If baked immediately, bake 450 12 - 15 min.

I love twice baked potatoes, so I'll be saving this entire thread! LOL Her's a favorite of ours. We often have them as a meal, served with just a salad or side of vegetables. Andouille and White Cheddar Over-Stuffed Baked Potatoes Recipe courtesy Emeril Lagasse, 2000 8 large baking potatoes, like Russets Drizzle olive oil Salt Freshly ground black pepper 3 tablespoons olive oil 2 cups thinly sliced onions 1/2 pound andouille sausage, ground 8 tablespoons butter 1 to 1 1/2 cups cream fraiche 1/2 pound white cheddar, grated 1/4 cup chopped chives 1/4 cup chopped parsley Preheat the oven to 400 degrees F. Season the potatoes with olive oil, salt and pepper. Place on a baking sheet and bake until tender, about 1 hour. Remove from the oven and cool. In a saute pan, over medium heat, add 2 tablespoons of olive oil. When the oil is hot, add the onions. Season with salt and pepper. Cook until caramelized, about 8 minutes. Remove from the heat and cool. Meanwhile, in a saute pan, over medium heat, add the 1 tablespoon of oil. When the oil is hot, brown the sausage, about 6 minutes. Using a slotted spoon, remove the sausage and drain on paper towels. Set aside. Using a sharp knife, remove the top 1/4 of each potato. Using a spoon, remove the flesh from each potato, leaving about 1/4-inch border on each potato. Set the hollowed potato shells, aside. In a mixing bowl, combine the potato flesh, butter, and cream fraiche. Season with salt and pepper. Using a hand masher, mash until smooth. Add half of the cheese, onions, sausage, chives, and parsley. Season with salt and pepper. Mix well. Fill each hollow potato with the potato/sausage mixture. Top each potato with the remaining cheese. Place on a baking sheet and bake until the potatoes are warm and the cheese melts. Remove from the oven and serve. Linda

375 instead of 350? I'd wrap in foil and place directly on the oven grill...just to be safe? flip them over half way...

Fore medium large russet potatoes(5")...375 for 60 minutes if preheated.....90 minutes if NOT preheated. Stick a fork...through the foil to test for doneness @ the 60 minutes mark.

If you have a microwave, bake them halfway done there first, then put them in the oven to finish. Do they have to be foil wrapped? Bakers turn out much better without the foil. Foil will steam them, but not wrapped they are fluffier inside and the skin is crisper.

I'm along the line of PKramer. Pre-baking them, and baking unwrapped would be lovely.

When forks are poked into foil-wrapped potatoes, be very careful that pieces of foil don't get into the potato. That happens a lot. I just give my potatoes a squeeze to test if they're done.

I'd wrap them in foil, and half way thru cooking, rotate them in the oven, so they are all evenly cooked.

the reason I suggested foil wrapped was to keep them warmer for serving, and with so many hands touching, ect...

400 F for about 1 - 1 1/2 hours which is what I do mine at anyway. However I don't wrap mine in foil. I just pierce the skin and bake. Wash them, dry them off and then wrap them. You can rub butter on them if you want to as well.
` If you can't fit `them all on one rack with space between them, divide them up onto two cookie sheets and then switch racks half way through cooking. check them at the 60 minute mark.

If it's a convection oven you don't have to switch the sheets.

Can you wrap them in the foil after they are finished, to keep the heat in? I think they sell foil squares that might work well.

I wash/scrub mine well, dry, then rub with olive oil and coarse salt, wrap in foil and bake till I can squeeze them. I use about 400 degrees and time varies with size of potato.

at work we wrap them in foil and bake in an oven for about an hour 400 degrees.
Our oven tends to run a little cold thought hence the 400 instead of 350. We have put more than that in at the same time. I would check with a fork though to make sure they are done.

I had to bake more than that for the band one year and I wrapped mine in foil after they were oiled and salted. Baked them at about 375 for an hour. My potatoes were not huge. I did test with a knife to make sure that they were done. If not I left them in a little longer. Easier than making mashed potatoes for a crowd.

Thanks for all the suggestions. My get-together is over and my potatoes were fine.

I wrapped them in foil and baked them at 375 for 1 1/2 hours, turning them about 1/2 way thru. I just laid them on the oven racks. I had both racks pretty full, without having the potatoes touching each other.
