How much spaghetti sauce will I need??

I made a huge pot of spaghetti sauce today (YUM! Thanks to the recent homegrown tomato thread!) I was the lucky recipient of a box full of extra tomatoes from my Aunt's garden.

We are heading to the beach this weekend and I have frozen the sauce.... how much should I take to feed 10 people? I have NEVER been good at estimating spaghetti amounts. I always have WAY too much.

..... and once you tell me how much sauce.... how many noodles to go with it?!

I'd figure 3 servings per pound for a main course, good eaters. As for the sauce amount, I'd ladle sauce on a plate, imagining a bunch of spaghetti under it. However many ladle-fulls it takes to make a generous serving, multiply by at least 10.

I freeze spaghetti sauce in small containers for the two of us. 1-1/2 cups of sauce for the two of us always leaves leftover sauce. So I'm guessing closer to 1/2 cup of sauce per serving.

You need a pressure canner for sauces with meat. There are some pasta sauce recipes without meat that don't require a pressure canner, but you may have to look under alternate names. So there are two Ellie Topp pasta sauce recipes provided on this forum and there are also seasoned tomato sauces of various types in resources like the Ball Blue Book. The other option is to make a big batch of spaghetti sauce to your family's taste and freeze it instead of just the tomatoes. It might not take any more space and would be much more convenient. Carol

There are tested recipes on the NCHFP's Web site. There is one without meat and one with meat. Take a look and see if you think you might like them. They do require a pressure canner, however. I don't can mine, only because I get too creative and throw all kinds of stuff in the sauce. You don't want to just go by taste, it may not be acidic enough to safely can, depending upon your recipe. Here is one to compare, it tells it gives you a total amount of pints of sauce. I would subract the amount of the other vegetables, then use the rest of the amount of tomato puree to equal the 9 pints... SPAGHETTI SAUCE WITHOUT MEAT -------------------------------------------------------------------------------- 30 lb. tomatoes 1 cup chopped onions 5 cloves garlic, minced 1 cup chopped celery or green pepper 1 lb. fresh mushrooms, sliced (optional) 4-1/2 tsp. salt 2 tbsp. oregano 4 tbsp. minced parsley 2 tsp. black pepper 1/4 cup brown sugar 1/4 cup vegetable oil YIELD: About 9 pints PROCEDURE: CAUTION: DO NOT INCREASE THE PROPORTION OF ONIONS, PEPPERS OR MUSHROOMS. Wash tomatoes and dip in boiling water for 30 to 60 seconds or until skins split. Dip in cold water and slip off skins. Remove cores and quarter tomatoes. Boil 20 minutes, uncovered, in large saucepan. Put through food mill or sieve. Saute onions, garlic, celery or peppers, and mushrooms (if desired) in vegetable oil until tender. Combine sauted vegetables and tomatoes and add remainder of spices, salt and sugar. Bring to a boil. Simmer, uncovered, until thick enough for serving. At this time the initial volume will have been reduced by nearly one-half. Stir frequently to avoid burning. Fill hot jars, leaving 1-inch headspace. Adjust lids and process. RECOMMENDED PROCESS TIMES FOR SPAGHETTI SAUCE WITHOUT MEAT IN PRESSURE CANNER pints 20 min. quarts 25 min.

Home canning doesn't normally allow for canning your own recipes since without any testing you have no way of knowing the density or the pH of the food. Both are vital for safety and determine the type and length of processing required. Plus the reprocessing of already canned foods is discouraged because of the unknown ingredients, the wasted energy, and the effect the reprocessing has on the foods. Plus home canning doesn't allow for some things to be included - in this case the cheese - because of the effect it would have on the safety when stored in a vacuum. Pastas, rices, oils, any dairy or fats, any thickeners are restricted in home canning. In the case of the dairy, the cheese and oils, it is because fats will encase/coat any bacteria present and prevent the heat from killing them. So to be able to fully answer your question about canning it we'd need to know the exact recipe and amounts. The proportion of garlic and onion to the amount of tomatoes could be important as all are low-acid ingredients and may have to be pressure canned or have additional acid added. And you would at the least, have to leave the cheese out and add it AFTER the jars are opened for use and any oil used would have to be kept to a minimum and the food well-drained/blotted before including. Honestly, it is a freezer recipe as you have listed and that is your best and safest bet. But if you wish to can some sauce there are any number of tested and approved tomato-based sauces available. What are you serving with the spaghetti? How many of the 10 are kids under 12? Will there be meat in the sauce?
On the average, I figure 4 people for a pound of spaghetti, and 5 or 6 if there are half small kids or small eaters. For a church lunch, in a casserole with meat and veggies, I find that 1 pound serves about 14 to 15 people. It also makes a difference what kind of pasta you will be cooking. For some reason, things like penne or fusilli seem to go farther than spaghetti, you can serve more people from a pound of the stuff.
And I would figure 2/3 cup sauce per person....if it's good they will dip their bread in it!!
Being generous, I would take 1 1/2 qts of the sauce....and cook 4 pounds of pasts and use fusilli or penne and make salad out of the leftovers.
Have fun...I wish I were close enough to the ocean to go to the beach for a weekend!

1/2 cup of Sauce per serving, mark how many servings in the container and date.

Noodles ??? Your not making Soup ! How about something like Rigatoni,

Thanks so much for the recommendations. I ended up making about 26 cups of sauce. We had to sample it tonight.. and it was delicious!

I put hamburger and italian sausage in the sauce... yum.

This is going to be one quick and easy meal to serve while on vacation! My kind of meal.

LOL!

That's just how much I ended up making last night. I am freezing all of it and I was just asking how much I should take to the beach for 10 people. I have it portioned in 4 cup containers (not filled to the top, so its really 3 - 3 1/2 cups in each container).

But to answer your question/commnet... yes, we are big eaters, but not quite that big!
