1 a.m. Chana Masala

It was so hot out today I had a long nap in the afternoon after working all morning in the garden. Needless to say I'm wide awake. Earlier in the afternoon I was at the grocery and saw frozen ready to eat (Michelinas style) Chana Masala for over $2 a tiny serving. I haven't had any since leaving Calgary last year, in fact I don't think there is one East Indian eatery in this town. So I decided to make my own. Perused a few websites and winged it from there.

I started out by sauteeing a large onion and two crushed garlic cloves in butter.

In the food processor I put a 28 oz can of diced tomatoes and a 19 oz can of rinsed chick peas (garbanzos). Whizzed into a slurry.

To that slurry I added about 2 heaping teaspoons of curry powder, 1 teaspoon of Turmeric, 1 teaspoon of Coriander powdered, 1/2 tsp of salt, dash of ground pepper and 1/2 teaspoon of red chili powder. More whizzing in the food processor

I placed everything into the pressure cooker and added about 1 1/2 cups of water and the sauteed onions/garlic and let it cook under pressure about 8 minutes.

Released pressure and put it in a large saucepan on the stove whereupon I added a second 19 oz can of Chick peas (rinsed) and let it cook down about 20 minutes.

I'm surprised too, it turned out as good as many I've had at authentic Indian restaurants back in Calgary.

Serve on or beside a bed of white rice.

Great for vegetarians.

Now I can go to bed, I hope.. LOL
