Thank you everyone, for remembering my birthday! Jessy, those men are on their best behavior today, even the oldest, hairiest one (DH):-) So far, my 10 year old has made coffee and vacuumed the carpet in the bedroom. Yeah, it's gonna be a GREAT DAY!

Last night we went for a birthday dinner to my favorite Middle Eastern restaurant. Among all of the delicious treats we enjoyed, I tried something new and now I'm on the hunt for a recipe. It's called Mama Ganouj, which is apparently not the same as Baba Ganouj. It's made from eggplant, which I typically don't like, but it had this amazing smoky flavor, and was like a chunky paste, with chopped onion, tomatoes and walnuts on top. It was heavenly! So, for my birthday, I am requesting a recipe for Mama Ganouj from my forum friends! I will be eternally grateful, as will my family, who knocked me out of the way to slurp up the last of this amazing dish.

I did a google search for Mama Ganouj and all I found were a couple of blogs that said it is the same as Baba, but made with zucchini instead of eggplant. Sorry....no recipe.

Hey stranger and happy, healthy, fun-filled Birthday wishes being sent your way ~ (((big hugs))) to you!

It sounds like you may have had muhammara with eggplant & onions added. I'd first cut the eggplant, into 1/4" slices (or halves if you use the baby eggplants), sprinkle with salt and let them drain. Rinse & dry them. Liberally brush both sides of the eggplant with olive oil and roast over a charcoal fire until soft & brown. Set aside to cool and then cut into chunks.

Here's a traditional muhammara recipe (of Turkish origin):
1 1/2 cups shelled walnuts
1 1/2 to 2 T tomato paste
1 slice toasted whole wheat bread
8 T evoo
2 T pomegranate syrup or the juice of 1/2 a lemon
1 t ground red hot chili flakes or a pinch of chili powder
1 t cumin
2 t sugar
salt to taste

Blend everything together to a chunky paste in the food processor, add chopped sauteed onions (till medium brown) & eggplant.

It may have also been a modified batrik (which is typically prepared with bulghur, not eggplant, but who knows?).

Prepare eggplant as above. Mix with 6 medium tomatoes that have been peeled & pureed, the juice of 1/2 lemon and 1 t tomato paste. Let sit for an hour or so and then add 4-6 T evoo, chili flakes or powder and 1 onion (sauteed). Before serving add 2/3 cup chopped walnuts or pistachios.

Linda, thank you so much for trying to find a Mama Ganouj recipe. I did a similar search and saw something about zucchini as well. I could even call the restaurant to confirm that it's not zucchini, though I think the menu described it as being made with eggplant. It had a very light, fresh flavor, not the typical tahini flavor you associate with baba ganouj.

Pauline, my friend, I think you may have found what I'm looking for! It sounds a lot like what we ate. How are you??? I've missed seeing you around too, I hope everything is going well and life's treating you fine. I was in Boston about 6 months ago for a 2 day business related trip and I thought of you. Everyone in "Beantown" OK? I am printing the recipe for muhammara and will be trying it. Thank you for your efforts on my behalf:-)
