Thanks everyone!! It was so fun spending hour upon hour in my new kitchen especially with the yucky weather we had over the weekend. It rained and rained and rained, non stop for 2 days. I did not even open our barns!!

Here's the Oven Dried Tomato Recipe. I found it some time ago on the Harvest Forum.

Oven dried tomatoes (Posted by Patris)

In large bowl combine:

1 cup Extra Virgin Olive Oil
1/4 cup Balsamic Vinegar
1 Tsp. Lemon juice
1/4 cup fresh chopped (or dried) Parsley (I skipped this)
1 Tbl. chopped Rosemary (I skipped)
Dried Pepper flacks to your taste, oppt. (I used Hot Hungarian Paprika)
Salt & Pepper to taste (no salt)

1. Leave skin on and cut tomatoes in to bite size pieces. (I cut 1/8" slices and left mine whole)
2. Take out any seeds.
3. Place tomatoes in the mixture and refrg. for at least 2 hours. (I left mine in the frig over night)
4. Set oven on lowest temp. Max. 200 degrees.
5. Take tomatoes out of mixture and spread on cookie sheet. It's OK if they touch. (I spread out on parchment paper on a cookie sheet)
6. They will need to Oven dry for about 14 to 16 hours. (Mine were dry in about 6 hours at 200 degrees)
7. Size of pieces will determine time.
8. I put mine in about 7pm and get them out the next morning around 10:30am.
9. Amount of tomatoes is up to you.

10. You will not be able to stop eating them. I have put most of mine up in the freezer. They are especially wonderful in pasta dishes or salads.

I used Plum Tomatoes so removing the seeds was very easy. Also cut in 1/8 slices but am going to do 1/4" next time which will take longer to dry.

They are delicious and we've already munched more then half of them.

Any way to store besides freezing? If only freezing is recommended should I use freezer jars?

I have a pineapple sign in my kitchen - I love them and their meaning....oh and the floor is to die for and...it is all just spectacular and...nice canning and cute dog:)

Oops the recipe is bit out of whack. Should read to remove seeds before slicing. Just cut off the vine end and stick your thumb into the seed cavities and the seeds just pop out.

I'm really envious of the tomatoes, though, I've gotten just a few ripe ones so far. Madelyn is beautiful, pat her for me, good doggie.

That's the kitchen I want! I love the stove. It's georgeous! And what's more remarkable is that you are using it. All the people I know who have kitchens like that don't even bake or cook anything from scratch. I canned a few peaches this weekend and you haven't seen a mess until you've seen my kitchen. Your tomatoes are beautiful. I used to can like that when we had access to free tomatoes and fruit and four kids to feed, who also helped.

What a glorious tomato bounty. Beautiful jars and I think the dried tomatoes are beautiful too, despite what you said. Don't they taste wonderful? I like to dry cherry tomatoes, mixed colors. They make a terrific snack, especially in the dead of winter when I'm hit with tomato cravings.

The tomatoes are in the oven as I write. They soaked all night, and have been in the oven 8-9 hours already and beginning to look like they are drying. I have a new Thermador oven that actually has a dehydrating setting on it, so it's getting it's first try.

Besides eating these out-of-hand how else do you use them? crumble them over things? I can't quite see all the marinating and drying only to toss them in a pot of sauce and have them disappear.

Sorry I deleted the pic of my dried tomatoes today as I was running out of space.

Dried tomatoes make any sauce delicious, so you will not be loosing the flavor of the dried tomatoes.

Tonight I had a few dried tomatoes on my hamburger and it was wonderful! But you can put them on a salad, in any tomato based sauce or I've even tucked them in a grilled cheese before...delicious!
