Are You Making Soup?

With such cold temperatures, I wonder if anyone else is making some soup to eat. I am making beef vegetable to have. It is my favorite. I may make some chili soup which is different from just plain chili. If you aren't making any soup, what are you fixing? It is -5 right now.

I made a Vietnamese style soup yesterday. Noodles, veggies, left over meatloaf were in it.

YUMMY, and enough for two more meals. :)

Soup is sounding so good right now. Hope I make it to the store today for all the ingredients. Not sure what to make yet.

Of course it can't spontaneously have more water than it had before, but you might find that steam condenses on the inside of the lid and drips back down, making it look like there's water sitting on top of the sauce.

Here too, Linda. I made a big pot of cabbage soup. Froze 6 servings for later use. It was yummy. :) Now that I live alone, I find I can get by with cooking only once or twice a week, since I freeze left overs for later use. The soup makes me have 5 different meals in the freezer again. Moni

Man...I can't imagine a pot of potato soup with 10 pounds of potatoes...was that a mistake? One of the best potato soups I've ever had was made with a bag of the square cut frozen hash browns. But I can't remember the recipe. If I can find it I add it here. patti

Here's one I have in my 'puter folders, and I've made it, more of less. No Bayou Blast and no mint but pretty much the same. I suspect this is an Emeril recipe. Mauren Portuguese Sausage and Kale Soup Ingredients: 2 tablespoons olive oil 3 cups Portuguese Sausage (Linguica or Chourico), about 14 ounces, sliced, 1/2-inch thick 1 medium onion, chopped 2 large potatoes, peeled, cut in 1/2-inch cubes 1/4 cup minced fresh parsley 1 tablespoons minced fresh garlic 10 to 12 cups unsalted chicken stock or low-sodium chicken broth 4 cups curly kale, about 4 ounces, stems trimmed, torn in pieces 2 bay leaves Salt to taste 1/2 teaspoon dried thyme 1/4 teaspoon crushed red pepper 2 tablespoons Bayou Blast 5 turns ground black pepper 1/3 cup minced fresh mint Directions Heat oil in a large pot over high heat. Add Portuguese sausage and onion; cook, stirring, until onions begin to soften, 2 to 3 minutes. Add potatoes, parsley and garlic. Cook, stirring, 2 minutes. Add 10 cups stock or broth and kale; heat to a boil. Add bay leaves, salt, thyme, pepper flakes Bayou Blast and black pepper. Reduce heat and simmer, uncovered, until potatoes are tender, 20 to 25 minutes, adding more stock if necessary. Skim fat from surface and ladle into large bowls. Top with mint; let stand a minute or two before serving. *Note: Be sure to use curly kale rather than decorative or ornamental kale. Curly kale, a non-heading member of the cabbage family, has frilly, dark green leaves and is sold in bunches Preparation time: 25 minutes Cooking time: 30 minutes Makes 16 cups

I'm going to make a pot of vegetable soup for my lunch. Lots of different goodies to go in it... barley, quinoa, kidney beans, and plenty of chopped veggies. So good to take the chill off.

I make lots of different soups; we love them. Pea soup might be the favorite or maybe chowder or oyster stew or tomato bisque or....

I have done bean and ham this week, and Shore Lunch vegetable soup. The latter was a pleasant surprise, as it was very good. It comes in a packet, such as Bear Creek, etc. It's a complete soup, but I added a pound of browned hamburger and a can of Rotel tomatoes. I suppose the sodium content is high, and I have thrown the wrapping away. As I say, it was very good. Well, the bean and ham was good, too, but I expected that to be!

I made two kinds of soup earlier in the week. Just hearing the weather forecast make me want to do that. I have split pea and vegetable with lots of beef this time.

I made turkey noodle last Saturday and today I am going to make vegetable beef. We love soup for dinner and it makes the house smell so good. I still have some split pea in the freezer. I always make enough soup to freeze except for the turkey noodle. It was so good we just kept eating it.

I have some potato soup in the freezer that I am going to defrost for today. Next week I will make some split pea for DD to take home with her. They have been living in two rooms upstairs for the last 3 months with a remodel that has another month or two. New kitchen, new floors throughout the downstairs. She has an electric tea kettle, coffee machine and microwave to feed her two little guys and one big guy.

I will also send her home with prebaked bacon, pancakes, cookies, and a few other things to warm in the microwave.

I will be having chicken,or turkey with rice or noodles. I buy a 10 pound bag of chicken legs/thighs at walmart (or safeway) and cook then put the meat and broth in searving amounts in freezer to pull out when wanted. Do this with whole turkeys also.

made a huge batch of stew..divided it in half but omg..we ended up eating one batch (with some leftover for my lunch)! it was our anniversary dinner as well...after 44 years I'd rather eat home...lol...haven't made chicken soup in a long time..maybe that will be my next marathon cooking session?

I am thinking of making a beef fajita soup, using the beef fajita meat I have in the freezer. I have to check the pantry to make sure I have enough goodies to go into it.
