Have You Had Your Pancakes for Today?

I had wheat and honey pancakes and two strips of bacon and a cup of hot tea. Is anyone else planning on pancakes sometime today?

Yes, we'll have our pancakes for supper tonight! I don't know if we'll be having bacon or sausage with them tho.
We'll be having blueberry pancakes, tho. I froze pounds and pounds of them.

Maybe waffles tomorrow, but no pancakes in the immediate future.

First of all I want to Thank you all from the bottom of my heart for your advice & compassion. I have been very stressed over all of this and I could feel the genuine concern you have for our situation. Just to fill in a few blanks, we are both now 56 yo. DH has his BA & MBA & a certified Project Manager. He worked AND went to school at same time. I'm afraid I am lacking in the educational department. I have 2 AA degrees in nothing marketable, & got my RE License about a month(2006) before the market started crashing-but left because of my DM deteriorating health at the time. But, actually I was the main caregiver for both of my parents from 2001 until 2007 in our home until they both passed. Dad had cancer & Mom had Alzheimer/dementia. About 2 months after my DM died (Dec '07) I started babysitting(Feb'08) for my 2 granddaughters until just this past November '09, when I started working part-time again. Can't believe I did the formula, diapers, potty-training all over again, but my girls were a good distraction from my grief. My DS & DDIL paid when the could, what they could,--most of the time, not at all, but I just wanted to help them out & make sure the girls were safe with me. It was never about the income, it was all about what was best for my GDD's. Last summer I looked into a local university here & wanted to start school to get a Gerontoloy Certificate ( would take 18 months) & eventually work in Hospice & for seniors. (Heck, I am a senior now too according to Bob Evans--lol) I guess I am just destined to be a caregiver all my life. I started the application process & was told I would probably be eligible for Finacial Aid, but I think working Full Time has to be my priority now. I've been brainstorming to think of any additional means of bringing in some income--like maybe renting out the in-law quarters of our home. Selling off some jewelry--only about $200.00 worth, but every bit has to help. We're down to 1 car which we "juggle". Right now, everything just seems up in the air. We might know more by this week-end, when either my DH's project goes well or comes crashing down & him with it. I am preparing for the crash down, because in the past few weeks, anything that could go wrong, has gone wrong. Like servers going down for hours, connection problems etc. One manager just walked off the job, because he said he couldn't take the pressure anymore. So, Thank you, thank you, thank you, all for taking the time just to let me talk/write about this & for listening. I know there are those here with far worse problems (health etc) & my problems are miniscule compared to theirs, but I thank you again for your suggestions & support. God Bless ~~ katclaws

Have your painted cabinets chipped & how long have you had them?

My Plain & Fancy cabinets are 10 now. Factory spray painted. This Old House did a show on P&F focusing on the painted surface which seems to be especially durable. On the show they were installing white cabinets. Mine are a butter color. The only areas of wear is on the edge and knob of the garbage pull out and on the handle of the dishwasher -- I had purchased a handle from Lee Valley and sent it to them for spray painting. This is wear and it's the type people pay to get on painted furniture. No chipping whatsoever and no separation in the seams either. We are in upstate NY so we have similar temperature extremes as New England. No idea if P&F has changed their manufacturing in the last few years. There was a poster on here with a huge rant on them but I've been very happy with the quality. Kompy, who's a KD, did a gorgeous white kitchen a year or so ago with P&F. You might consult her as well if they interest you.

Most of the time I use the Aunt Jamima mix where you do have to add egg, milk and oil. My kids don't care, but I do eat a couple and I don't like the texture of the "complete" mixes. But I am willing to try the Krusteaz complete mix if I see it next time. If I don't have any mix, I will make them from scratch. But I am just as likely to be out of one ingredient or the other. Sometimes I add stuff to the mix, like vanilla or fruit or cocoa. But once I reached for the vanilla and accidentally grabbed the peppermint extract. Didn't notice until they started cooking and smelled kinda different ;o) I let a kid try one, but we ended up throwing it out and starting over... from scratch, that was the last of the mix. DS spent the night with a friend a few weeks ago and his mom made pancakes "from a can that looks like whipped cream, you spray it on." Sure enough, next time I was in BJs I saw it, in a can you hold upside down and push the nozzle. So I agreed to try it. The kids still didn't care, but I thought it made tough pancakes, not fluffy. Last week I saw the same stuff featured on the Today Show with Kathy Lee and Hoda. I will not buy it again. That's my review: thumbs down.

My mom used to be able to take a 20 minute nap, wake up refreshed and ready to go. If I happen to take a nap, I sleep for a couple of hours and wake up with no energy. I only nap when I am sick....if I am not feeling ill, a nap is an omen that some sort of infection is coming. Glad you are able to nap and wake up happy.

hubby makes his own waffle mix from scratch, so every morning, he makes us waffles, maple syrup, bananas, and strawberries. With the freeze in Florida we are having a time finding strawberries in the store. Sometimes, I will cook a moringstar sausage with my waffle.

For some reason, IHOP isn't doing the free pancake thing till next Tuesday,Feb. 23. So , no, I have to wait.

Maybe I'm not getting it..is there any significance to pancakes today? I am planning on blueberry pancakes for tomorrows breakfast. Dottie

Many of the churches in this area have pancake suppers on Shrove Tuesday, just before Lent begins (forty one days till Easter) - I'm heading out to one shortly ... then to an investment meeting.

Don't you wish that you were in New Orleans, for Mardi Gras?

It's snowing, here - but they don't have enough, in the Olympic venue near Vancouver, but they had enough at Whistler, though they got some fresh powder overnight, and they want the packed stuff for downhill skiing.

I had cabbage/kraut/mushroom filled crepes that had been breaded and fried for lunch (with sour cream...mmmm!).

And for dinner, I made "rolled pancakes"...fried kielbasa and real smoked bacon on the side. I got the kind that has the rind on it, which gets all crunchy and good, Les Oreilles du Christ, for those French Canadians out there LOL.

My mom raised us on "French Pancakes" - thicker than a crepe but not fluffy like an American pancake. What I make is a crepe recipe. The flavour is the same (and I cook them on BOTH sides, with one side being golden brown thank you), they are just thinner. If DH makes pancakes, it is buttermilk fluffy things. If I make them, it is crepes. Since I roll them for DD, the name "rolled pancakes" was born!

I am no longer Catholic/Christian, but something about having pancakes for dinner on Shrove Tuesday is like a comfort thing. I like food traditions, even if they aren't my own ;)

I made pancakes for supper tonight, and put money in the kids' ones. Coins in the pancakes on Shrove Tuesday was a tradition when I was little, and I've been doing it with my kids for 4 years now, I guess.

Nope, no pancakes here tonight but Nicole just brought back an old memory for me. My Mom would bake us our birthday cakes with coins in them. She wrapped them in waxed paper and baked them into the cake. I grew up in Canada.....is this a Canadian thing? I haven't thought about that for years. Thanks Nicole :-)
Another thought, Mom was raised Catholic....maybe that's where it came from. ?

Our blueberry pancakes were so good! Served with warm blueberry sauce, whipped cream and smokie links! Yum!
