What an Awesome and Simple Dinner I just Made!

2 racks of St. Louis Style Ribs (spare ribs with the knuckle ends cut off)

Remove "silver skin" on back of ribs if it is there. One rack had it, the other didnÂt

Sprinkle liberally on both sides with McCormick Grillmates Barbecue Seasoning (or any you like)

Bake on a rack at 250 (yes, 250) for 3 hours (the rack keeps them above the grease running off)

Remove and cut them apart and baste with your favorite BBQ sauce

Put back in at 350 (yes, 350) for 30 minutes to caramelize the sauce

MeanwhileÂ

Chop a big white onion up and caramelize it in a small amount of butter or oil

Remove from pan and add 5-6 chunked up yellow squash to pan and sauté until tender

Put the onions back in and add about ½ cup of chopped sun dried tomatoes (that you soaked for 10 minutes in warm water to rehydrate them, then drained)

Cook together for 20 minutes to let the flavors mingle

We loved it. Even David who doesnÂt like yellow squash.

*Silver skin is simple to remove. Just pry up an edge with a knife and grab it with a damp paper towel and pull. Usually will come right off in one big sheet.

* Using foil will make the pan easier to clean (wish I had remembered to do that)
