Easy Raspberry Fool (Real Simple)

1/2 cup raspberry jam

1 1/4 cups heavy cream

1 tablespoon granulated sugar

1 cup fresh raspberries

4 cookies

In a large bowl, beat the heavy cream with the sugar until stiff peaks form.

In a small bowl, whisk the jam until smooth; fold into the whipped cream. Spoon into serving bowls and garnish with the raspberries and cookies.

Oh yum, Jasdip! Walmart has a really good almond-flavored butter cookie that would be really good with it.

This bread would go really well with soup, I think.

BACON CHEDDAR BEER BREAD (Slow Roasted Italian)

3 cups all purpose flour (363 grams)
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons granulated sugar
1 1/4 cup shredded cheese (I used Monterey Jack, Colby and Cheddar mixture)
1 12 ounce bottle of beer (can is fine too)
4 slices of bacon, cooked and chopped (1/4 c real bacon bits)
2 tablespoons butter, melted

Preheat oven to 350Ã¯Â¿Â½. Prepare bread pan by greasing with butter. Set aside.

In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center. Add bacon, about 3/4 of cheese and full beer into the well. Stir with spoon until well combined. Pour in bread pan and drizzle with 1 Tbsp. butter. Bake 30 minutes.

Remove from oven and drizzle with remaining butter. Return to oven and bake an additional 25-30 minutes until brown on top or it "thumps" when you tap the top. Remove to a wire rack and cool 5 minutes. Remove from pan. You can brush with more butter if you wish.

This sounds quick and easy. Got it in Mr Food's email this morning.

So we're in the mood for a little something sweet, like maybe a cherry pie. Well, there's bad news and good news. The bad news is that we aren't going to have a real cherry pie. And the good: What we'll come up with is something pretty darned close to that pie we're craving, and much easier to prepare.

Tortilla Crepes
Serves: 4

Cooking Time: 18 min
Ingredients

1 (21-ounce) can cherry pie filling, divided
4 (8-inch) flour tortillas
1 tablespoon confectioners' sugar
1/2 cup frozen whipped topping, thawed

Instructions

Preheat oven to 350 degrees F.

Reserve 1/4 cup pie filling; divide remaining pie filling equally over tortillas, forming a line down center of each. Roll up and place seam side down on a baking sheet.

Bake 8 to 10 minutes, or until bubbly and heated through. Let cool 5 minutes then sprinkle with confectioners' sugar.

Top each with a dollop of whipped topping and reserved pie filling. Serve warm.

Alternate between cherry, blueberry, apple, peach, and strawberry pie filling for a new flavor every time you make these.

Whirligig Cookies Preheat oven to 375 degrees Baking time 10 to 12 minutes. 1/2 cup shortening 1/2 cup brown sugar 1/2 cup granulated sugar 1/2 cup peanut butter, creamy 1 egg, unbeaten 1 1/2 cups all purpose flour, sifted before measuring 1/2 teaspoon soda 1/2 teaspoon salt 1 package (6 ounces) chocolate chips Cream the brown sugar, white sugar and shortening and peanut butter thoroughly. Add the egg, beat until light and fluffy. Sift flour with soda and salt. Add to egg mixture and blend well. Roll dough into an oblong shape 1/4 inch thick. Melt chocolate chips over boiling water. Cool slightly. Spread on rolled dough with spatula. Roll up like a jelly roll and chill. Slice 1/4 inch. Place on ungreased cookie sheet. Bake. Remove from pans to racks to cool. No it's not Rachael Ray I don't think. I'm positive it came out of a Real Simple magazine. I've got R.R's Big Orange Book that I'm trying to sell on Kijiji. Hubs gave it to me for a gift, but I'm not going to get the use out of it that I want. No takers yet though, and it's been up there for a while!

CROCK POT HONEY SESAME CHICKEN (Very Culinary) 5 boneless, skinless chicken thighs (about 1 1/2 pounds) salt and pepper 1 cup honey 1/2 cup soy sauce 1/2 cup diced onion 1/4 cup ketchup 2 tablespoons vegetable oil or olive oil 2 cloves garlic, minced 1/4 teaspoon red pepper flakes 4 teaspoons cornstarch dissolved in 6 Tablespoons water 1/2 tablespoon (or more) sesame seeds 3 scallions, chopped Lightly season both sides of chicken with salt and pepper, put into crock pot. In a medium bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 4 hours. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut or shred chicken into bite size pieces. Then in individual bowls, place chicken pieces over cooked rice and spoon some sauce on top. Sprinkle with sesame seeds and chopped scallions. Serves 4

Turnip Fries Ingredients: * 8 medium turnips (about 2 1/2 pounds) * 1/2 cup heavy cream * 1 teaspoon Splenda * 1 teaspoon freshly grated nutmeg or 1/2 teaspoon ground nutmeg * 1 teaspoon freshly ground black pepper * 1/4 teaspoon salt (sea salt works best) * 1/4 cup grated Parmesan cheese * Olive oil spray * Lime juice Peel the turnips with a vegetable peeler, slice and cut into 2 1/2-by-1/2-inch sticks. Pour 1/2 cup heavy cream into a large bowl and place the turnip sticks into the cream. Fill bowl with cold water until the turnips are completely covered. Add 1 teaspoon Splenda. Swirl a bit to mix and allow to sit in cream mixture for 10-15 minutes. (This cream-soaking step removes the "bite" flavor of the turnips, leaving them with a milder, more potato-like flavor.) Rinse in colander with cool water and pat dry. Preheat oven to 425F. Combine turnip sticks with the nutmeg, pepper, sea salt and Parmesan cheese in a large plastic (Ziploc-type) bag. Seal the bag and shake well to coat the turnip sticks. Spray 2 large baking sheets lightly with the olive oil spray. Spread the turnips in a single layer on the sheets and spray again with the olive oil. Bake in a preheated 425F oven for 15 minutes. Turn the fries over and continue baking for 15 minutes, until the fries are tender and golden in color. Serve hot with a sprinkle of lime juice. ** some people like to sprinkle a little chili powder or cajun seasoning on for extra spice. Some recipes say to leave the skin on, feel free to try it either way, I think the skin makes them rubbery and more tart. Makes 8 servings.
