Buffalo Chicken Meatballs

1 lb ground chicken

1 egg yolk

generous handful of breadcrumbs

1/2 small onion

2 garlic cloves, peeled

handful parsley, chopped

1 tbsp olive oil

2 tbsp butter

1/2 cup hot sauce

2 scallions, finely chopped

1/2 cup buttermilk or cream

1/2 cup blue cheese, crumbled

celery and carrot sticks

Preheat oven to 400.

Place the ground chicken in a mixing bowl and add the egg and bread crumbs. Grate 3-4 tbsp onion into the bowl then grate the garlic. Add the parsley and season with salt and

pepper. Using your hands mix, but don't overmix.

Press the meat in the bowl and score into 4 equal portions with the side of your hand. Form each portion into 4 meatballs equaling 16 meatballs in total. Arrange the meatballs on a non-stick baking sheet and coat with the olive oil. Bake 12-15 minutes until golden brown and cooked through.

While the meatballs are baking, melt the butter in a large skillet over medium heat. Add the hot sauce and whisk. Toss the meatballs in the hot sauce to coat.

In a small bowl combine all but 1/2 tbsp of the scallions with sour cream, buttermilk and blue cheese. Garnish with remaining scallions and serve with the meatballs and celery and carrot sticks.
