Saffron Chicken Pilaf (Nigella Lawson)

I saw her make this the other day and it looked delicious.

1 lb chicken breasts, cubed

1 cup Greek yogurt

juice of 1/2 lemon

1/4 tsp cinnamon

1/2 tsp saffron threads

2 cups chicken broth

3 tsp butter

2-3 tbsp olive or peanut oil

2 cups basmati rice

juice and zest of 1 lemon

2 oz cashew nuts

1 oz pine nuts

2 oz sliced almonds

3-4 shelled pistachio nuts

chopped fresh parsley

Marinate the chicken in yogurt, lemon and cinnamon for at least 1 hour. Soak saffron threads in chicken broth.

Over medium heat melt the butter with 1 tbsp oil and add the rice, stirring until coated. Pour saffron and chicken stock over rice, add lemon juice and zest and bring to boil; cover and reduce heat to very low. Cook 10-15 minutes or until the rice has absorbed the liquid and is cooked through.

While rice is cooking, shake excess marinade off chicken and fry in hot skillet with remaining oil.

When the rice is ready, remove from heat and stir in chicken. Toast all the nuts except the pistachios and add to pilaf. Top with some chopped parsley.
