Pizza Video

Kevin uploaded a couple of pizza videos to YouTube - see link below to the first one. I had partially baked the pizza before putting it on the peel from the screen, and I forgot to put semolina on the peel first to make it slide properly. There is another video that shows me putting it on from a board, but Kevin left the video on while I went into the house to get the pizza, and he did not edit out the dead time.

I am in the process of uploading a video that I made for a friend's son who asked for my pizza recipe. I decided to make a video for him to show him how I stretch my pizza dough into shape. It is a somewhat boring and dull video, but I think it will help show him how to shape the dough.

That was fun! The dead air isn't too long. I love watching the steam/smoke coming out the top of the BGE. :) Is that part of the BGE you put it on, or is that a separate stone type thing? When you pre-baked them, did you use a screen? Or did you do them inside?

You've given me the courage to think about trying it on my little charcoal barbecue, but I really don't know what I'm doing. :) (I mean, yes, I make good pizza, but, no, I don't know anything about barbecuing one. I have a screen, but the BBQ has no lid so I'm wondering if I'll need a mixing bowl or something...)

Great videos! The techniques did give you a wonderful pizza, that's the most important part.

I have to laugh at Kevin's impressive welder's gloves.

I got my Breville Crispy Crust pizza maker, will try it out today. This is not their much more expensive pizza smart oven, it is a small pizza ,maker that makes 12 inch pizzas. I had one for years and was very happy with it. It gets a little hotter than an ordinary oven but not so hot as their smart oven, and of course nowhere near the Ooni. But it is easy to use indoors. I spent a number of hours research videos of pizza making and decided to try freezing a whole cooked pizza. The Zojirushi makes enough for 3 twelve inch pizzas, but I saw many reviews on freezing dough and they came up with different opinions, so before I try that, I will experiment with the time saving freeze-the-whole-pizza. I am perfectly happy to microwave pizza the next day to reheat it, and when I buy delivery pizza I always have leftover pizza, but this experiment will test a frozen pizza stored for a week, if I can keep my hands off of it for that long.

Most of the generic Asian stores here in this Eastern metro area are run by Koreans. Being the savvy entrepreneurs that they are, they don't just sell Korean things. They go for the wider market of just about anything that is not European in origin. And, even then, you can still buy some more common grocery store things such as bread, milk, canned soups, etc. One of the larger ones is Chinese centered, but they do as the Koreans do and sell other cultural foods as well. I like to shop there and one of them is generally on my grocery buying trips. But we are limiting ourselves just because it is what it is and I haven't been back in there since last Spring. Our boring old grocery stores are mostly that, just boring and increasingly full of processed junk or totally overly packaged food items. The Asian markets may reek of fish, but at least they smell of something that is food. I sure do wish that we had more variety from Central America available to us around here. They have some darned good food!!! I wish I could find fresh tamales.

Nightmares and sleep problems

I had a horrible nightmare again this morning at about 4 AM, and I had to stay up long enough for the memory of it to fade. I think I need to look into the effects of cheese and dreams because I did have some Brie last night late in the day. It's a snack I like to have late at night, and I'm not sure how often it causes nightmares, or whether it is the cause at all. I also ordered some Magnesium taurate supplements to see whether they can help. I'm going to see my doctor tomorrow regarding new BP medication that he had prescribed for me (Nifedipine ER) that I believe is causing my feet and ankles to swell. This is a know side effect of this medication, and so I plan to stop taking it after I get my doctor to prescribe something else. The dream I had this morning was another university nightmare, but this time I was going back to the first university that I had attended but was being put into on campus residential housing. I was assigned a roommate that I liked, but when we went to our housing, it was in a large building that we had to share with a lot of other students, and there were very few defining walls to separate the individual spaces, and so I could not tell where our space ended and someone else's began. I wanted to have more walls to provide privacy, and this was causing me anxiety that made me wake up. The interactions I had with other students and staff were particularly disturbing. The closet that I thought was going to be ours was already full of someone else's stuff, including a huge collection of heads or busts that were storing wigs. Some of the busts were somewhat grotesque, and I wanted them out of our closet. There were also a lot of very small dresses on hangers in this closet that looked like they were meant for dolls. There was an office in the building with managers, and I tried to get them to define the limits of the space that we were supposed to occupy, and so they started painting lines on the floor to show exactly where our space was. The lack of real walls was what caused me the most anxiety, and so I woke up and was afraid to go back to sleep. I do appreciate all of the good advice that I have received here and will try to implement more of it - especially the suggestions right before going to sleep. Yesterday or the day before I was watching old episodes of Candid Camera with my brother, and there was one that had a small girl in the early 1960s being interviews by Alan Funt. At one point, she talked about having nightmares, and she said that when that happened, she would tell herself to redirect the dream to something positive, and this worked for her. Unfortunately, this has not worked for me, but I will keep trying.

Thanks Lars for taking the time to make the video. I think that there will be many that will benefit from watching how you stretch your dough.

Kevin's gloves are from Steve Raichlen Best of Barbecue - they were specifically designed for BGE or Kamado BBQ.

Ann, I've mostly seen others stretch the dough by lifting it up and then pulling it out with their knuckles, and this works well if you want a see-through paper thin dough, kind of New York style, which I also like, but now I prefer a somewhat thicker dough, which is why I use my current technique. My friend's son is 17 years old and has been to a couple of my parties. He's interested in cooking and has made several of my recipes that I have given him. I had always hoped that some of my relatives would be interested in my recipes, but at least someone's relative is! I originally wrote down recipes so that in case I ever became incapacitated, someone would be able to cook for me the way I like. I've taught Kevin how to cook fish, but not much else.

When I made the pizzas, I prebaked them for 7 minutes at 425 degrees on screens in my oven (which has a pizza stone). I put a small amount of fresh Mozzarella and Fontina cheese on the dough first. Then I removed the pizzas from the screens, added toppings, and cooked them in the BGE on what is actually a "plate setter". I was told it was a pizza stone when I bought it, and then later I found out that we were using it upside down. Most people seem to use a pizza stone on top of the plate setter, but if it is oriented the way I use it, that is not necessary. Anyway, the surface is plenty big for use as a pizza stone. According to some, it gets too hot, and so I might try getting a pizza stone to go on top of it.

Boy, I have a lot to learn! New words like "plate setter". :) Do they call it that because it looks like a food service plate rack?

This makes the BGE that much more interesting... :) Thanks for the info.

Not sure why they call it a plate setter, but it gets confusing when they call it P/S, which is the acronym for pizza stone.

I ordered a new round pizza stone to use on top of my plate setter, as I think the plate setter got too hot. I'm going to have to use my laser thermometer gun to check the temp of the plate setter, although I think its maximum temperature is 750 degrees.
