Freezing Celery

I am a regular over at the hosta forum. I thought I would stop in here in hopes that you people are as helpful as the hosta forum members.

I love to make soup in the cooler months (which in Minnesota is many months long.) I have been buying locally grown celery at the Minneapolis Farmer's Market. It's leafy and really good for stocks. I froze some last winter in Ziploc Freezer bags. It turned out fine to use when making the stocks.....a little mushy for leaving in the soup itself. I decided to grow celery this year. I was shocked that as of last week it is bigger than the stuff from the store. I have 36 bunches growing. The plants were so cheap - I think I went overboard. I have potted up a couple of plants and given them to friends to snip and use as they need it.

Has anyone ever frozen celery in leaves in Food Saver vacuum bags. My sister has a food saver and I thought I would try that method.
