I have 2 bunches of celery. It was so cheap I bought a fresh bunch for Thanksgiving. Can I freeze the older bunch?

Yes! I do, for when I save scraps for stock.

From NCHFP

Celery loses its crispness when frozen. The frozen product is suitable only for cooked dishes.

Preparation - Select crisp, tender stalks, free from coarse strings. Wash thoroughly, trim and cut stalks into l-inch lengths.

Water blanch for 3 minutes. Cool promptly, drain and package leaving no headspace. Seal and freeze.

Ken - A comment on canners and racks - if I may - Be sure to check water bath canners to see if they are tall enough for quart sized jars. They are making shorter ones now - that work better for pints. The shorter ones will not allow a full 2 inches of water over the top of the jars once filled, especially if it has a rack that lifts off the bottom. Also - in the case of choices in racks - I have very hard water and went looking for a stainless steel rack as a rust inhibitor. I did find one, however, the wire configuration is such that it lets smaller jars tip over. It would be best if they made them with concentric circles - as some are. These will hold small jars upright and prevent tipping. Sometimes these little annoyances can be irksome when you've got a big pot of boiling water to contend with. Just my 2 c's. Bejay

One of the best ways to have crispy home grown celery, is to pick it just before using it. We home gardeners have the advantage that way - (aren't we lucky?). I suspect, however, one of the reasons that grocery store celery is so crisp, is because it is blanched - which gives it that crunch. I haven't bothered to do that, mainly because we don't eat too many dishes that call for it - stir fries, etc. By shading celery - heaping soil around the lower plant, or piling up leaves or mulch around the stalks when ripening, will blanch the stalks - this gives them that crispness. I also like to keep fresh picked celery in cold water, the same as a whole head of lettuce - to help with freshness. On the other hand, the leaf lettuces seem to keep better just washed and put in zip bags and refrigerated - as least for me. bejay

Can I freeze B&B refrigerator pickles?

I've been making freezer pickles for years. The combination of vinegar, sugar and freezing magically results in a very crisp pickle upon opening. I put them in 1 cup containers because they do go a bit limp if not used within about a week. I also make freezer cauliflower pickles ... using the same recipe. Linda Z has several freezer recipes using different seasonings. Mine is below, but I see no reason why your recipe wouldn't work just fine. Freezer Pickles Yield: about 4 pints. 7 cups unpeeled cucumbers sliced thin 1 cup onions sliced thin 1 cup red bell peppers sliced thin 1 tbsp kosher salt 1 1/2 cups white vinegar 2 cups sugar 1 teaspoon celery seeds Sprinkle salt over sliced cucumbers; let sit one hour and then drain. Make syrup with vinegar, sugar and celery seed. Bring to boil till sugar is dissolved. Let cool. Mix cukes with onions and pepper, Put vegetables into sterile jars and fill with syrup. Freeze. Can thaw and eat after 24 hours.

I used plastic freezer bags to hold my chili in the freezer for a while, but since they aren't that easy to clean out I switched to regular pint canning jars. I reuse the metal tops (since I just twist them on, I'm not actually "canning") or I also have a bunch of the plastic tops (obviously reusable). I like the metal tops, since they clean off a bit easier, and will take some of the expansion of the contents. I fill to the "shoulder" or a bit less, probably about 1-1.25 inches. I've had a few where the contents pushed the metal tops out a bit, but none broke the glass. They do take a lot of space though, I need a shelf in the fridge. I filled the entire floor space of the fridge with pint jars of chili this year! I just stacked everything else on top. Cheers, Kyle

Zackey- if you take your celery out of the plastic bag, and trim the ends (don't wash) , wrap tightly in aluminum foil, it literally lasts for weeks to over a month this way in the fridge. I don't know why- something to do with the foil. My celery when kept in the plastic bag always went to mush. Wrapped in foil it's never gone bad, but it's gone 'blah'. Hope that helps. If you freeze it, post back how it goes. I only use it for soups as well.
