It means Egyptian brown beans....similar to fava beans...I bet you could use dry baby lima beans in a pinch.

Sharon, that looks very similar to what we call crooknecked squash except that I don't see a crook (bend) in the necks. I like zucchini but I prefer the crookneck squash - we have some bearing in our garden now. The flavor is delicate and almost buttery. Dinner the night before last was that and some carrots steamed with some chedder cheese grated on top and a slice of the cinnamon walnut raisin bread I made for dessert.

Yes, the brown beans for this recipe probably are the fava bean relative. Looking more closely at the picture, they have a little dark mark at the end like fava beans.

Crookneck is different from the rest. It has a yummy flavor. It is not just different in shape from straight neck, it tastes better. I have been carrying on a one man publicity campaign promoting Yellow Summer Crookneck squash. Try it everyone!

But Jim, does it always have prickles? The plant is kind of annoying because it has little prickly hairs all over it and the squash has some too. They come off easily with a brush, but it isn't fun picking the squash when I'm too lazy to put on gardening gloves. The crookneck squash are worth tolerating the prickles when picking, but it would be nicer if they weren't there.

The yellow squash I know, crookneck or straight neck doesn't have prickles....

Yes, the prickles are annoying! They give me a rash if I'm foolish enough to go out without long sleeves.

Funny this should come up. A couple days ago I was shopping at the local market for dinner ingredients. I had picked out some zucchini when I was approached by an English lady. She had with her the produce manager. She held up 2 zucchini in her hand and asked "Do you know if this is the same a courgette?" The produce manager shrugged his shoulders; he had no idea. I told her yes then asked what made her ask me. She said I look like I knew my vegetables by the way I was looking them over. Go figure!
