Here's a recipe from Guy's Big Bite on Food Network.

Beer Battered Onion Rings

4 cups canola oil or peanut oil
1 cup sour cream
3/4 cup mayonnaise
3 tablespoons sun-dried tomatoes
1/4 cup red bell peppers, roasted
1 tablespoon lime juice
1 1/2 teaspoons pepper, fresh cracked
2 teaspoons salt
3 tablespoons white wine
1 tablespoon garlic, minced
2 yellow onions, sweeter the better, Vidalia or Texas sweets
2 cups buttermilk
2 cups all-purpose flour, divided
1 teaspoon garlic, granulated
12 ounces beer, medium body
3 tablespoons grated Parmesan

In a Dutch oven heat oil to 350 degrees F.

In a food processor combine sour cream, mayonnaise, sun-dried tomatoes, red bell peppers, lime juice, 1/2 teaspoon pepper, 1 teaspoon salt, white wine and minced garlic, cover and refrigerate for 1 hour.

Cut onions 1/2-inch thick, remove dark exterior of onions, separate into rings and soak in buttermilk for 1 hour.

Combine 1 cup of flour, remaining salt, pepper, and garlic, mix thoroughly. In a medium bowl combine beer and 1 cup of flour, mix thoroughly.

Remove onion rings from buttermilk, shake off excess, dredge in flour, shake off excess, then dip in beer batter. Drop some onion rings in oil and continue process, being sure not to crowd rings as they will stick together. When golden, remove and let drain on paper towels.

Garnish with Parmesan.

I can't find any recipe I have from Ann...
but I use flour lightly seasoned with a little garlic p9owder and some chili powder....no salt as It draws the moisture out....I salt later.
I do egg, flour and let dry a bit on a rack, then egg and seasoned bread crumbs and fry.
The bread crumbs can contain salt but not the flour.

I believe that's where you'll find the recipe you're looking for.

Here is Angelaid's recipe....it is really good!

Onion Strings

1 large onion sliced very thin
Buttermilk
flour

Lawrys Seasoning Salt
Onion Powder
Garlic Powder

I use about 1 tsp each of the above - you can vary it to your taste.
Put onion strings in buttermilk and let set for 1 hour or more. Shake in plastic bag flour mixed with seasoning salt, onion powder and garlic powder. Shake excess off. Deep fry until light brown. Serve with Bloomin' Onion Dip.

Bloomin Onion Dipping Sauce

1/2 cup mayonnaise
2 teaspoons ketchup
2 tablespoons cream-style horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
Dash ground black pepper
Dash cayenne pepper

RIB-EYE STEAKS WITH GORGONZOLA BUTTER AND CRISPY SWEET ONION RINGS

Onion rings
3 cups buttermilk
2 sweet onions (such as Vidalia or Walla Walla), thinly sliced into rounds, then separated into rings
3 cups unbleached all purpose flour
3 tablespoons onion powder
3 tablespoons garlic powder
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper

4 cups canola oil (for frying)

For onion rings:
Pour buttermilk into large bowl. Add onion rings; toss to coat. Let stand 1 hour, tossing occasionally. Mix flour, onion powder, garlic powder, salt, and pepper in another large bowl.
Preheat oven to 350°F. Pour enough oil into heavy large skillet to reach depth of 3 inches. Heat over medium-high heat to 350°F. Working with a few onion rings at a time, shake off excess buttermilk, then turn onion rings in flour mixture to coat. Fry onion rings until deep golden brown, adjusting heat as necessary for each batch to maintain temperature at 350°F, about 2 minutes. Transfer onion rings to paper towels to drain, then place on baking sheet and keep warm in oven while frying remaining onion rings.

Very similar to the one I used Ann T. P/W's recipe has a bit of cayenne pepper-it's good!

I put a couple of shakes of Tabasco in the one marigene posted too. It is really good.
