Here's the recipe from ATK, which I've been meaning to try but haven't gotten around to yet. It's for oven-fried onion rings: Oven-Fried Onion Rings We had the best results with kettle-cooked potato chips. Makes 24 rings, serving 4 to 6 1/2 cup all-purpose flour 1 large egg, at room temperature 1/2 cup buttermilk, at room temp 1/4 tsp cayenne pepper S&P 30 Saltine crackers 4 cups kettle-cooked potato chips, crumbled into small pieces 2 large yellow onions, cut evenly into 1/2" thick rounds 6 tbsp vegetable oil 1. Adjust oven racks to lower-middle and upper-middle positions and heat oven to 450 degrees. Place 1/4 cup flour in shallow baking dish. Beat egg and buttermilk together in medium bowl. Whisk remaining 1/4 cup flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon pepper into buttermilk mixture. Pulse saltines and chips together in food processor until finely ground and place in separate shallow baking dish. 2. Pull apart the rings in each round, discarding any that are less than 2 inches in diameter. Working one at a time, dredge each onion ring in flour, shaking off excess. Dip in buttermilk mixture, allowing excess to drip back into bowl, then drop into crumb coating, turning ring to coat evenly. Transfer to large plate and repeat with remaining onion rings. 3. Pour 3 tablespoons oil onto each of two rimmed baking sheets. Place in oven and heat until just smoking, about 8 minutes. Carefully tilt heated sheets to coat evenly with oil, then arrange onion rings on sheets. Bake, flipping onion rings over and switching and rotating position of baking sheets halfway through baking, until golden brown on both sides, about 15 minutes. Transfer onion rings to plates lined with paper towels to drain briefly. Serve immediately. MAKE AHEAD Oven-Fried Onion Rings can be breaded in advance and refrigerated for up to an hour. Let them sit at room temperature for 30 minutes before baking; if baked straight from the fridge, the onions will not soften properly and will remain crunchy. It looked good when I saw them make them on TV. I've always deep fried them myself, usually in a beer tempura batter. Lars

Hi Linda! My sister just made this yesterday for a May Breakfast at work. She said it was a huge hit. Baked French Toast Casserole with Maple Syrup Description: Recipe courtesy Paula Deen Ingredients: 1 loaf French bread (13 to 16 ounces) 8 large eggs 2 cups half-and-half 1 cup milk 2 tablespoons granulated sugar 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Dash salt Praline Topping, recipe follows Maple syrup Directions: Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight. The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup. Praline Topping: 1/2 pound (2 sticks) butter 1 cup packed light brown sugar 1 cup chopped pecans 2 tablespoons light corn syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Combine all ingredients in a medium bowl and blend well. Garden Medly Quiche From the Beasly House in Napa, CA Ingredients: 10 Eggs 1/2 cup all -purpose flour 1 tsp baking powder 1 1/2 tsp onion powder 1/2 tsp garlic powder 1/4 cup butter or margarine, melted 3 cups cottage cheese 1 cup cooked fresh spinach, 10 oz package frozen chopped spinach, thawed and squeezed dry 1/2 red pepper, chopped 1/2 yellow or green pepper, chopped 1 bunch green onions, chopped 12 oz. shredded Swiss or Monterey Jack cheese Directions: 1. Preheat oven to 350 degrees. 2. In a blender or food processor, combine eggs, flour, baking powder, onion powder, garlic powder, butter or margarine, and 1 cup of the cottage cheese; blend well. 3. Pour blended mixture into a large bowl and add remaining cottage cheese, spinach, peppers, green onions and shredded cheese. Mix all thoroughly. 4. Divide mixture between 2 greased 10-inch pie pans. Bake for 40-45 minutes or until set. Number Of Servings:16-20 Preparation Time:20 minutes Another winner!! Blintz Brunch Bake I have served this with blueberries and strawberries. Ingredients: 2 pkg. (8 oz. each)Cream Cheese, softened 1 container (15 oz.) Ricotta Cheese 5 eggs, divided 3/4 cup sugar, divided 2 tsp. grated lemon peel 3 Tbsp. fresh lemon juice 1 cup flour 1 cup (2 sticks) butter or margarine, melted 1/4 cup milk 1 Tbsp. Baking Powder Directions: Beat cream cheese, ricotta cheese, 2 of the eggs, 1/4 cup of the sugar, lemon peel and lemon juice in large bowl with electric mixer on medium speed until smooth; set aside. Stir flour, melted butter, remaining 3 eggs, remaining 1/2 cup sugar, milk and baking powder in separate large bowl; whisk until smooth. Pour 1/3 of the flour mixture into greased 13x9-inch baking dish. Spoon cream cheese mixture evenly over flour mixture. Gently spoon remaining flour mixture over top. Bake at 325°F for 45 minutes or until set. Cut into squares. Sprinkle with powdered sugar, if desired.

I like them both, if they are made well. Generally speaking, I like onion rings, but not the pre-fab, frozen ones you get at fast food places. I like to make them at home. I also like home made french fries. My husband makes the best ones. He cuts the potatoes in rounds and then in pieces about the size of your little finger. He doesn't peel them. And he puts too many in the oil at once, which by the time they heat back up, results in french fries that are like twice fried...the way the old recipes always called for. They are crispy on the outside and dry and fluffy on the inside. I also like to use a waffle cutter and make waffle fries. Those are great with malt vinegar and ketchup. Love home made potato chips too.

Bringing this to the top again. This is my Mom's awesome carrot cake that I make regularly. Carrot Cake 2 cups flour 1 1/2 tsp baking soda 2 tsp baking powder 2 tsp cinnamon 2 cups sugar 4 eggs, beaten 1 1/2 cups vegetable oil 8 1/2 oz can crushed pineapple well-drained 3 1/2 cups grated carrot 1/2 cup chopped walnuts Icing: 8 oz cream cheese, softened 1/4 cup unsalted butter, softened 1 tbsp sour cream 1/2 tsp vanilla 1 cup icing sugar In a large bowl sift flour baking soda, baking powder and cinnamon. Add sugar, eggs and oil and beat with electric mixer. Stir in carrots, pineapple and walnuts; mix well. Grease and flour a 9x13" baking dish. Bake in 375 degree oven 45-55 minutes until done. For icing, beat cream cheese, butter, sour cream and vanilla. Add icing sugar and beat well. Cool cake and spread with icing and garnish with more chopped walnuts.
