Making ice cream again but have the wrong egg substitute

I am ready to make more kefir ice cream today. The last time I used kefir grains instead of eggs and the ice cream became flakey after freezing. I was going to use a recipe from my little ice cream makers manual and it called for egg replacement. I went to the store and got myself some egg replacer. Came home and looked at it, "for use in baking only"! UGH! So much for using egg substitute in my ice cream today! If I am going to use raw egg, do I just use one egg yolk? Is raw egg safe in ice cream?
