does anyone have a recipe for vanilla ice cream without using evaporated milk

and has anyone ever substituted eggbeaters for the eggs in ice cream ???? does it work ????

Freezing Time: 2 hrs.

This recipe is from Butter Busters by Pam Mycoskie. The nutrition info per sugar serving is as follows: 132 calories, 0.2g fat (2%), 2mg cholesterol, 0g fiber, 6g protein, 26g carbohydrate, 94mg sodium. For the Sweet and Low recipe its 102 calories and 18g carbohydrate.

1/2 cup Sugar
OR
1/4 cup Sugar
AND
3 packets Sweet 'n Low
2 tablespoons Cornstarch
3 cups Skim milk
1/4 cup Water
1/2 cup Egg Beaters
2 teaspoons Vanilla

In a large saucepan, combine sugar and cornstarch. Gradually add milk and water, stirring constantly. Over medium heat, bring mixture to a boil, stirring constantly. Remove from heat and stir in vanilla.
Pour into an 8 x 8 x 2" metal pan. Freeze until ice crystals form around the edge of pan, about an hour. Spoon into a large bowl. Beat at high speed until smooth. Return to pan. Repeat freezing and beating step once. Freeze until firm. Serve immediately

Vanilla Ice Cream & Variations

1 cup milk
1/2 teaspoon vanilla
1 cup sugar

Mix all ingredients together and process in ice cream maker.

Yield:
"1 quart"

NOTES : For Chocolate Ice Cream - add 1/2 cup chocolate syrup.

For Mint Chocolate Chip Ice Cream - replace vanilla with mint extract and add a few drops of green food coloring. When ice cream is almost done, add either some mini chocolate chips or regular chocolate chips which have been chopped in the food processor.

This is refrigerated, not frozen: PINK TORTE 1 box coconut macaroon cookies 1 pint heavy whipping cream 1 can crushed pineapple, drained 2 egg whites 1/2 cup sugar 1 cup boiling water 1 pkg Jello (any red color) Crush cookies in a processor to make fine crumbs. Pour Jello into boiling water, stir until Jello is dissolved & refrigerate until partially set. Beat egg whites w/sugar until stiff. In a separate bowl, beat whipping cream until thick. Remove Jello from refrigerator & beat until foamy. combine egg whites & whipping cream. Fold in Jello until entire mixture is smooth, no lumps. (This will be the pink mixture). Grease bottom & sides of a springform pan (or you can use a 9x13" pan.) Sprinkle 1/3 of the cookie crumbs on the bottom & sides of the pan. Pour in 1/2 of hte pink mixture. Sprinkle with 1/3 of the macaroon crumbs, then layer all of the pineapple & then the remaining pink mixture. Finish topping with the last of the cookie crums. Refrigerate overnight.~~Kitchen Miracles HEATH BAR ICE CREAM PIE (make day before) - Serves 12 1 1/4 cups chocolate wafer crumbs 1/4 cup butter, mleted 12 (about 12 oz) Heath bars, refrigerated to harden 1/2 gallon vanilla ice cream, softened Mix chocolate wafer crumbs with 1/3 cup butter, mleted. Line 9x13" pan with crumb mixture. Pat down & refrigerate until firm. crush hardened Heat bars but placing unwrapped candy in a plastic bag & hitting with rolling pin or saucepan bottom. Mix w/softened ice cream. Put in crust & freeze overnight. Serve with warmed sauce. SAUCE: 1/4 cup butter 6 oz pkg chocolate chips 1 cup confectioners' sugar 6 1/2 oz evaporated milk (like Pet milk) 1 tsp vanilla Melt butter w/chocolate chips in top of double boiler. Cover with a thin layer of jam & slivered almonds, reserving a few almonds for topping. Prepare pudding according to pkg directions, cool & spread in an even layer over almonds. Ice Cream Sandwich Torte Ingredients 1 cup coarsely chopped creme-filled chocolate sandwich cookies (about 10 cookies) 1/2 cup milk 1 package (3.9 ounces) chocolate instant pudding and pie filling 1 container (12 ounces) frozen whipped topping, thawed, divided 12 frozen ice cream sandwiches (3.75 ounces each), unwrapped, divided 2 tablespoons semi-sweet chocolate morsels, grated or multi-colored sprinkles Directions 1. Coarsely chop cookies using a food chopper. In a Bowl, combine milk and pudding mix; whisk using stainless steel whisk until mixture is smooth and begins to thicken. Fold in half of the whipped topping and cookies.. set filling aside. 2. Working quickly, arrange six of the ice cream sandwiches side by side on "Simple Additions Large Square Platter." Spread filling evenly over sandwiches. Top with remaining ice cream sandwiches, forming a rectangular-shaped torte; smooth sides. Spread remaining whipped topping over top and sides of torte. I can tell you from experience. Unfortunately, I made custard based "vanilla" the other night. I even put the bean in with the seeds while heating it. And never remembered to put in the vanilla extract. It was really good frozen custard, but it had very very little vanilla flavor. Or course, it could be that I just like it to have a much more pronounced vanilla flavor, so I'll stick with my "both" recipe.

I don't know if egg beaters work with all recipes or not. If you find one you like, try substituting and see how it turns out. A few years ago I went on a girl scout camping weekend, at that time, eggs were not to be eaten raw and as I didn't want to risk the girls getting sick, I used the substitute in the place of the eggs. We used a small and a large coffee can, put the ice cream mixture in the small can, put on the lid, put the can in the larger one, added salt and ice and the girls rolled the can around the picnic table until it was frozen. The girls had a great time doing this and talked about it for years. I had made a test batch before the campout to be sure it would work. I had never used the egg substitute before, but it turned out fine, I really didn't know the difference.
