Summer squash recipes to share???

We have loads of yellow summer squash coming on - for some reason the zucchini aren't as prolific. I've given away about as much of it as my neighbors can take. They run and hide when they see me now!

So this afternoon I'm doing "zen" in the kitchen and making a batch of soup to freeze. Makes a lot! Tastes like a cream soup without the cream.

Here's the recipe:

Yellow Squash Soup with Sour Cream and Chives

(12 servings)

1/2 (1 stick) unsalted butter

3 lbs. yellow (summer) squash, sliced

3 large onions, sliced

1 Tbsp. dried thyme, crumbled

6 14 1/2 oz. cans low-salt chicken broth (I use the big boxes now and measure 87 oz.)

garnish: sour cream & minced fresh chives

Melt butter in heavy pot over medium low heat. Add squash, onions and thyme. Cook until tender (approx. 30 minutes). Add chicken broth and simmer uncovered approx. 30 additional minutes. Puree (I use an immersion blender).

Soup can be frozen at this point.

To serve, bring soup to a simmer. Ladle into bowls - garnish with dollop of sour cream and sprinkle of chives.
